Whip up these air fryer chicken fajitas for a quick and easy weeknight meal the whole family will enjoy.

Ingredients

  • 1 pound chicken breast

  • 1/2 red bell pepper, sliced

  • 1/2 yellow bell pepper, sliced

  • 1/2 green bell pepper, sliced

  • 1/2 medium-sized onion, sliced

  • 2 tablespoons olive oil

  • 3 tablespoons fajita seasoning

  • 6-8 flour tortillas, for serving

Instructions

  • Preheat the air fryer to 390 degrees Fahrenheit. 
  • Slice the chicken into thin, uniformly sized strips and add it to a medium or large mixing bowl. 
  • Uniformly slice the peppers and onions into strips and add them to the mixing bowl. 
  • Drizzle the olive oil over the chicken and veggies in the bowl. Then, sprinkle with fajita seasoning. Mix well to ensure everything is well coated in the oil and seasonings. 
  • Spread the chicken and veggies evenly in the heated air fryer basket. Cook for about 5 minutes. 
  • Remove the air fryer basket and shake well to rearrange the chicken and veggies. Return it to the air fryer and cook for another 5 minutes or until the chicken is thoroughly cooked and reaches an internal temperature of 165 degrees Fahrenheit.
  • Once the filling mixture is ready, transfer it to a plate and cover it with a paper towel to keep it warm. Then, add 2 or 3 tortillas (as space allows) to the air fryer basket. Don’t let them overlap. Cook them at 350 degrees Fahrenheit for 1-2 minutes or until warm. Repeat until all the tortillas are warm. 
  • Serve the fajita mixture with the warm tortillas and any desired toppings. Enjoy!

  • Serving suggestions: Serve with guacamole, pico de gallo, sour cream, Greek yogurt, Mexican rice, refried beans, shredded cheese, and/or lime wedges for added flavor.
