Savor the flavors of the season with this Winter Kale Salad! It’s a delightful mix of roasted butternut squash, pecans, and cranberries tossed in a tangy vinaigrette.

Ingredients

  • For the Roasted Butternut Squash:
  • 1 medium butternut squash, peeled and cubed

  • Olive oil

  • Salt and pepper

  • For the Vinaigrette:
  • 1/4 cup extra virgin olive oil

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon maple syrup

  • 1 teaspoon Dijon mustard

  • 1 small garlic clove, minced

  • Salt and pepper

  • For the Salad:
  • 1 bunch kale, chopped

  • 1 bunch rainbow chard, chopped

  • Roasted butternut squash

  • 1/2 cup dried cranberries

  • 1/2 cup chopped pecans

  • Vinaigrette

Instructions

  • Preheat oven to 400 degrees Fahrenheit. Toss butternut squash with olive oil, salt, and pepper. Roast for 25-30 minutes until tender.
  • Whisk together vinaigrette ingredients.
  • In a large salad bowl, toss together kale, rainbow chard, roasted squash, cranberries, pecans, and prepared vinaigrette.
  • Serve at room temperature or chilled.
  • Enjoy!
