Why You'll Love This Million Dollar Meatloaf
Easy Comfort Food: This isn't your grandmother's meatloaf. It's an elevated version with nostalgic comfort food appeal you can have in the oven in a snap.
Moist & Juicy: Say goodbye to dry meatloaf! The combination of evaporated milk and buttery crackers ensures your meatloaf stays perfectly juicy.
Sweet & Spicy Glaze: Pepper jelly, hot sauce, ketchup, and brown sugar create an irresistible sweet and spicy topping that caramelizes beautifully.
Budget-Stretcher: Despite its fancy name, this recipe transforms affordable ground beef into a memorable meal that serves a crowd with ease.
Ingredients
- Ground Beef: An 80/20 blend provides the ideal fat content for a juicy, flavorful meatloaf.
- Crushed Buttery Crackers: They act as a binder while adding a rich buttery flavor. I use Ritz, but you can use any brand.
- Evaporated Milk: More concentrated than regular milk, helping maintain moisture and a tender texture.
- Eggs: Help hold the meatloaf together.
- Onion & Garlic: Onions add sweetness, while garlic adds a savory depth.
- Ketchup & Worcestershire Sauce: Flavor boosters that add umami and tangy flavors.
- Italian Seasoning: Adds a complementary earthy flavor.
- Salt & Black Pepper: Basic but essential seasonings that enhance the overall flavor.
- Fresh Parsley: For a bright, fresh flavor to cut through the richness of the meat.
- Glaze: A combination of ketchup for tang, pepper jelly for sweetness and heat, brown sugar for caramelization, and hot sauce for an extra kick.

How to Make Million Dollar Meatloaf
If you've never made meatloaf before, let this be your first. It's super tender, perfectly spiced, and topped with the most dreamy glaze!
And while it might taste like a million bucks, the recipe is insanely easy to follow.
1. PREHEAT the oven to 350°F (175°C) and line a baking sheet.
2. MIX the crackers, milk, eggs, onion, garlic, Worcestershire sauce, salt, pepper, and parsley in a bowl. Let sit for 5 minutes, then gently mix in the ground beef.
3. SHAPE the meat mixture into a loaf on the prepared baking sheet.
4. WHISK the ketchup, pepper jelly, brown sugar, and hot sauce in a small bowl. Spread half over the meatloaf.
5. BAKE for 45 minutes, brush with the remaining glaze, then bake again for 20-30 minutes.
6. COOL for 10 minutes, slice, and serve.

Tips For the Best Million Dollar Meatloaf
I love serving this million dollar meatloaf for weeknight dinners, Sunday suppers, and even dinner parties.
The generous size and show-stopping presentation make it ideal for feeding a crowd.
Speaking of, if you really want to impress your guests, follow these tips:
- Choose quality meat. Use freshly ground 80/20 beef chuck for the perfect fat content to ensure juicy, flavorful results without being too greasy.
- Garnish with extra glaze. For extra flavor and moisture, reserve 1/4 cup of glaze and brush it on individual slices when serving.
- Use a baking sheet. Using a baking sheet instead of a loaf pan allows for better caramelization. It also prevents the meat from “steaming” in its juices.
- Check the temperature. Insert a meat thermometer at an angle into the thickest part to ensure the meatloaf is fully cooked. The center should read 160°F (71°C)
- DIY the jelly. Mix your chosen fruit preserves with a pinch of cayenne to make your own pepper jelly. And feel free to adjust the glaze to your tastes.
- Try other versions. Opt for Italian style with mozzarella stuffing and marinara glaze. Or, try a Southwest version with taco seasoning and cheese.
- Make it in advance. Mix, shape, wrap, and refrigerate the meatloaf up to 24 hours in advance. Warm slightly to room temp while the oven preheats.

How to Store
Leftovers taste even better the next day as sandwiches! They’re also great served with sides like mashed potatoes and green beans for a cozy meal.
To Store: Place the cooled meatloaf in an airtight container and refrigerate for up to 3 days.
To Freeze: Wrap individual meatloaf slices tightly in plastic wrap, then place them in a freezer bag. Freeze for up to 3 months. For uncooked meatloaf, wrap the entire loaf tightly in plastic wrap and foil before freezing.
To Reheat: Place meatloaf slices in a shallow baking dish, add 1 tablespoon of beef broth per slice, and cover with foil. Reheat at 250°F for 20-25 minutes. Alternatively, reheat slices in a skillet with a little butter over medium-low heat until warmed through.

Good base meatloaf (I skipped garlic)
I like ketchup topped meatloaf, even when using the sliced meatloaf in sandwiches.
Keep the recipes coming. I usually have one cooking day a week, making 4 meals & freeze most, but have a nice variety to choose from week to week.

My whole family Loved this recipe!! I don’t usually like meatloaf but I do like this one! it’s the only one I will make going forward. Hubby is happy since I did not make meatloaf B4 this recipe…
I was looking for a meatloaf recipe That you use A bottle of Steak Seasoning for seasoning the Meatloaf. So If you have Another way of using Steak Seasoning Spices besides just seasoning a steak with.
Hi, George!
I’m not sure if we have a meatloaf recipe that uses steak seasoning. If we do, I can’t seem to find it. We have a few that use Italian seasoning, but not steak.
As for things to do with steak seasoning, you have a lot of options there. You can use it on other meats, of course, but I also sometimes use it to season my potatoes and veggies. My brother puts it on his popcorn, but he’s a bit of a weirdo. Haha.
Your Ketchup Glaze Sounds Good. It kind of reminds me of what I did when I ran out of brown sugar. I had packets of Unopened Ham Glaze for A Holiday Ham. I Added it to the Ketchup and Mustard while Mixing the Ham Glaze That Contains Brown Sugar Cinnamon and Spices. When You Stir the Ketchup Glaze and Apply It on the top of Your Meatloaf, the Ketchup Glaze has a Slight Sweet Flavor, and the cinnamon and spices Bring out Other Flavors in the Meatloaf, making the meatloaf Enjoyable to eat.
That sounds fantastic, George!
Looks really delicious, I will be making it soon.
You mention thyme, but I don’t see it in the recipe. How much should be added?
Hi, Sally!
The thyme was from a previous version of the recipe. We’ve since updated it, so I edited the post and took that bit out.
If you wanted to add thyme, though, you can! I’d use a teaspoon of dried thyme or a tablespoon of fresh chopped thyme. 🙂
