This dish is everything I love about a cheeseburger but with the added bonus of crunchy tater tots. How could you go wrong with that?

It’s hearty, cheesy, and totally nostalgic.

Plus, it’s one of those dishes that magically gets everyone at the table smiling, no matter how their day’s been.

To make it, just follow these simple steps:

1. PREHEAT the oven to 375°F. Grease a 9×13-inch casserole dish with cooking spray.

2. COOK the ground beef and onion in a large skillet over medium heat, stirring often, until the beef is browned.

3. ADD the garlic, ketchup, mustard, BBQ sauce, salt, pepper, and diced pickles. Stir well and simmer for 2-3 minutes. Taste and adjust seasonings.

4. SPREAD the beef mixture evenly in the prepared casserole dish. Top with a single layer of tater tots.

5. BAKE uncovered for 45-50 minutes, until the tater tots are golden and crispy.

6. SPRINKLE the cheese over the casserole. Bake for 5-10 minutes, until the cheese is melted and bubbly.

7. COOL for 5-10 minutes. Serve hot with crumbled bacon and optional garnishes. Enjoy!

This genius casserole is perfect for those nights when you want to skip the drive-thru and serve up something that feels a little extra special (but is secretly super easy).

And I’m all about adding toppings—lettuce, tomato, dill pickles—because they really amp up the “cheeseburger” vibes.

Aside from that, I only have a few other tips to share:

  • Grate the cheese. Freshly grated cheese melts better and has a fresher flavor than pre-shredded.
  • Pat the pickles. Patting the pickles dry prevents excess moisture from making the casserole soggy.
  • Tailor the sauce. Taste-test the beef sauce, then adjust the condiments and seasonings as needed.
  • Layer strategically. For the best presentation, keep the layers distinct and even. Arrange the tater tots in neat rows with minimal gaps.
  • Crisp the tots. Place the casserole on the middle rack and broil for 1-2 minutes at the end for extra crispy tots.
  • Customize. Try ground turkey for a lighter version or add diced jalapeños for heat. You can also try other cheeses like pepper jack and mozzarella. 
  • Prep in advance. You can prepare the beef up to 24 hours ahead. Add the tater tots just before baking.

How to Store

Fast-food cheeseburgers don’t reheat well. But this casserole sure does!

To Store: Wrap cooled leftovers tightly in plastic or transfer to an airtight container. Refrigerate for 4-5 days. 

To Freeze: Wrap the unbaked, assembled casseroled tightly in plastic wrap and foil. Freeze for 3-4 months. Thaw overnight in the refrigerator overnight before baking.

To Reheat: For crispier tots, reheat in a 400°F oven for 7-10 minutes. Alternatively, microwave individual portions for 1-2 minutes, though the tater tots will lose their crispiness.

Note: I don't recommend freezing leftovers as the tots will likely dry out (since they were already frozen).

    I think Texas chili would be a great addition!
    I like my food spicy so I also usually add jalapeños to the mix.
    And if I have it, I like to mix in 1 tbsp Worcestershire sauce 🙂
