Cauliflower is a low-carb powerhouse used in everything from mashed “potatoes” to pizza crust. And cauliflower rice is just as popular.

In fact, many restaurants now offer this as a rice alternative.

So, if you’re trying to eat fewer carbs or on the keto diet, these cauliflower rice recipes are game-changers.

How to Make Cauliflower Rice and More!

1. Roasted Cauliflower Rice

Here’s a simple, three-ingredient rice dish you can use for any occasion.

It’s soft, fluffy, and feels like authentic rice. In fact, I think if you serve this for dinner, nobody will be able to tell it’s veggies!

Of course, by itself, it doesn’t taste precisely like rice. However, when mixed with other things, it’s pretty close.

So use it whenever you need a quick, easy, low-carb side dish.

2. 10-Minute Healthy Cauliflower Rice

Do you love fried rice but need a low-carb alternative? This recipe is the one for you.

It features the same great taste and healthy veggies but leaves out most of those pesky carbs.

It’s effortless to make, and fresh veggies add plenty of vitamins and minerals.

3. Mediterranean Cauliflower Rice

This cauliflower rice is light, bright, and fully loaded with Mediterranean flavors. There’s plenty of lemon and parsley and crunchy almonds, as well.

It makes a fantastic (and healthy) side dish and takes just 35 minutes to complete.

Serve it alongside lemon and herb chicken for a beautiful low-carb, high-flavor meal.

4. Kimchi Cauliflower Fried Rice

Summertime is the best time for cookouts. After all, what’s not to love about grillin’ and chillin’ with friends and family?

Add Korean flair to your menu this summer with kimchi cauliflower fried rice.

This dish is easy to make and will be a hit with everyone. So fire up the grill and get cooking!

5. Low-Carb Keto Jambalaya

Being on the keto diet doesn’t mean you have to settle for less. And this recipe is proof you can have your cauliflower rice and eat it too.

Keto jambalaya, I love you!

It’s packed with delicious and nutritious ingredients, including juicy shrimp and Andouille sausages.

Plus, there’s tons of feisty Cajun seasoning in every bite.

6. One-Pot Spanish Chicken and Cauliflower Rice (aka Arroz con Pollo)

Chicken and rice (Pollo con Arroz) is my go-to order at any new Mexican restaurant. If that dish is good, I know the rest of the menu is the bomb!

Of course, Pollo con Arroz doesn’t fit with a low-carb diet. Unless you make it with cauliflower rice, of course!

This herby, juicy chicken dish is impossible not to love. You can even top it in melted queso asadero if you like.

It’s cheesy, chickeny, and crazy good.

7. One-Pan Cheesy Cauliflower Rice with Broccoli and Chicken

While we’re on the subject of cheese and chicken, let’s check out this recipe.

It delivers tons of gooey cheese, plenty of crunchy broccoli, and tender chicken in every bite.

You’ll barely even notice there’s rice in it because everything else steals the show.

Luckily, the rice is there, and it’s fluffy and tasty.

8. Cauliflower Rice with Feta and Mushrooms

Looking for something earthy and herby? This 20-minute recipe fits the bill.

The mushrooms, garlic, and onions provide a rich, earthy base.

The feta adds a touch of tanginess, and the thyme is bold and herby. Altogether, it’s an excellent combination.

9. Southwest Cauliflower Rice

This spicy, meatless dish is ideal for lovers of Tex-Mex food.

It has all the best spices, from paprika and cumin to chili powder and more.

It’s fragrant, flavorful, and takes just 15 minutes to make. You can’t beat it for a quick and easy side dish.

10. Thai Red Curry Cauliflower Rice

Do you love Thai food as much as I do? Then this lightened-up Thai red curry with cauliflower rice is sure to thrill.

It has all the delicious flavor of your favorite Thai dish but is much, much lighter.

Also, it’s effortless to make! You’ll need a few simple ingredients and less than 30 minutes in the kitchen.

Try it if you want a healthy, tasty meal that won’t weigh you down.

11. Garlic Herb Cauliflower Rice

This nutritious, low-carb dish is incredibly flavorful.

The rice is soft, garlicky, and herby. On the other hand, the almonds add a delightful crunchy nuttiness.

Plus, you can tweak the flavor however you like more or fewer herbs.

For example, I go heavy on the garlic, cayenne pepper, and dill. Yum!

12. Japanese Beef Fried Rice

It’s buttery. It’s garlicky. It’s… beef fried rice!

Superman jokes aside, this stuff is fantastic. Not to sound too dramatic, but I could probably eat it every day.

And I’d still never get tired of it!

It’s a hearty, tasty meal with perfectly tender beef and robust green onions. Add the soft, melt-in-your-mouth rice, and what’s not to love?

13. Low-Carb Chicken Biryani with Cauliflower Rice

Need a dish that’s as aromatic as it is tasty? Indian food is the way to go.

And this low-carb chicken dish combines garlic and ginger’s warm, potent flavors with chili powder.

Then, it adds the bright freshness of cilantro, lemon juice, and mint.

It smells as good as it tastes, and it tastes phenomenal. Enjoy!

14. Korean Beef with Cauliflower Rice

Korean beef is another relatively simple dish to make.

It’s basically just beef, cauliflower rice, and green onions. Sound simple enough, but most of the flavor comes from the distinctive spice mixture.

It has a noticeable Asian flair and just enough heat to taste.

When it comes to keto-friendly Asian dishes, this one’s near the top of the list.

15. Sheet Pan Teriyaki Chicken and Cauliflower Rice

Thin strips of juicy chicken, a plethora of colorful veggies, and a thick, yummy sauce? Sounds heavenly to me!

If those things don’t make you drool, nothing will.

This dish sounds incredible. And fortunately, its taste lives up to the hype.

Best of all, you can make the whole thing on a single sheet pan. And it won’t take longer than 35 minutes.

16. Creamy Keto Mushroom Cauliflower Risotto

Is there anything better in life than soft, creamy risotto?

How about soft, creamy risotto that takes less than 30 minutes to make? Did I mention that it uses just nine ingredients?

Oh, and it’s keto-friendly!

I know; it sounds too good to be true, right?! It isn’t, though.

This cauliflower risotto is creamy, earthy, and unbelievably filling. It’s like “regular” risotto but has far fewer carbs.

You can’t beat that!

17. Cauliflower Risotto with Bacon and Mushrooms {Paleo, Whole30, Keto}

Here’s another creamy risotto recipe, but this one adds salty bacon to the mix. It’s just as scrumptious as the one above and even heartier.

The bacon also adds a delightful saltiness that’ll have you licking your lips after every bite.

Of course, because of that, it has a few more calories than the recipe above. That said, it’s still keto-friendly.

18. Cauliflower Chicken Fried Rice

This chicken fried rice is just as flavorful and filling as any takeout. It’s just cheaper and contains far fewer carbs.

Talk about a win-win!

There’s also a few more veggies in this one. I find it less greasy overall and generally feels cleaner.

It has a garden-fresh flavor, in other words.

If you love Chinese takeout, you’re sure to appreciate it.

19. Greek Cauliflower Rice Pilaf Bowls

Of all the recipes here, this is one of my favorites. And I’m so excited to share it with you guys.

I love it because it has so much flavor and is incredibly versatile.

You can serve it as a main dish or a side. Plus, it’s perfect for meal prepping!

Featuring red tomatoes, white rice, green veggies, and yellow lemons, it’s gorgeous to look at, too.

It’s a colorful, hearty way to enjoy cauliflower rice.

20. Cauliflower Rice Paella

Are you looking for something with a Spanish twist? Try this insanely good cauliflower rice paella.

Created by a nutritionist, this recipe is sure to satisfy.

It’s low-carb, paleo-friendly, and gluten- and grain-free. With a bit of tweaking, you can even make it Whole30-compliant.

So, what are you waiting for? This is a dinner anyone can enjoy.

21. Cilantro Lime Cauliflower Rice

This nine-ingredient meal is light, bright, and a little zesty. It also takes just 20 minutes to whip up.

And with only 48 calories and four net carbs per serving, you can’t go wrong.

Try it the next you need a quick, flavorful side dish for lean beef or chicken. It’ll be a hit for kids and adults alike!

22. Cauliflower Rice Burrito Bowl

Need a veggie-packed, vegetarian-friendly meal option? Then, give this burrito bowl a whirl.

It’s not as low in carbs as some of the other options on this list. That said, it’s pretty impressive for a burrito bowl.

Each serving has just 32 net carbs.

And while I know that’s a bit high for keto, it’s acceptable for most people on other low-carb or low-sugar diets.

Plus, it’s supremely filling. Seriously, I can eat this for lunch and not be hungry again until the next day!

23. Cauliflower Rice Stuffed Peppers

These stuffed peppers are just as filling as the burrito bowls. And they feature a lot of the same flavors and seasonings, too.

They’re somewhat spicy and full of fresh veggies, beans, and rice. Additionally, they’re vegan-friendly and gluten-free.

Serve them as appetizers, side dishes, or as full meals. Your friends certainly won’t be too hungry after chowing down on these.

24. Mediterranean Cauliflower Salad (Gluten-Free Tabouli)

When it comes to bright, zesty food, you can’t beat recipes from the Mediterranean. And this tabouli is no exception.

It’s zingy, garlicky, and overflowing with veggies. The bright and tangy lemon juice dressing brings even more yumminess.

It’s a convenient salad to make, too. You can fix it a day ahead of time, and even the leftovers taste great.

25. Paleo Cauliflower Rice Sushi Rolls Recipe (Spicy Tuna Rolls)

Most people think they have to give up sushi when they go low-carb. After all, sushi isn’t sushi without sticky rice, right?

Fortunately, cauliflower rice makes an excellent sushi rice substitute.

It doesn’t taste exactly the same. But hey, no one will care when the sushi is this good.

26. Cauliflower Rice Lettuce Wraps

I love crunchy, filled-to-the-brim lettuce wraps.

They’re fresh, crisp, and spectacularly good. You just never know what you’ll get from bite to bite.

And these cauliflower lettuce wraps taste just as wonderful as any others. Better still, they don’t have quite as many carbs.

So, if you’re craving lettuce wraps for lunch, try this recipe!

27. Sun-Dried Tomato & Basil Arancini (Vegan)

I may be in the minority here, but I’m not a huge fan of rice balls.

I find them a little bland and often too dry. To me, they’re nothing more than a vehicle for soy sauce.

However, these sun-dried tomato and basil arancini are anything but forgettable!

They’re laden with fresh ingredients and decadent flavors. They’re so good that you won’t even need sauce!

They make the perfect appetizer or main course. Trust me – you’ll love them!

28. Thai Cauliflower Rice Salad With Peanut Butter Sauce

What’s creamy, crunchy, colorful, and covered in peanut butter sauce? This savory Thai salad, of course!

It may not look like the salads you’re used to eating, but after one bite, you won’t care.

29. Herby Cauliflower Salad with Chickpeas

Want a zesty, lemony salad instead? Try this one filled with cauliflower, chickpeas, and plenty of herbs.

It’s as nutritious as it is yummy.

It’s soooo easy to make, too! It takes practically no effort, and you can do it ahead of time.

Make it the next time you need a side for an outdoor potluck, and everyone will thank you for it.

30. Cauliflower Tots

These tots are a lifesaver in the mornings.

I adore tater tots. When I want to cut carbs, I can say no to biscuits. I can even turn down pancakes and waffles.

But tater tots? Oh, man…those are hard to give up.

Thankfully, we don’t have to forego them anymore.

These simple, six-ingredient cauliflower tots are close enough in taste and texture that you’ll be more than satisfied.
