It’s a gorgeous, colorful salad with tons of veggies and even more flavor. And that parmesan herb dressing is the best. Make extra, refrigerate it, and use it on everything! 

2. Rainbow Summer Slaw

This rainbow-colored side dish is more of a slaw than a salad. Still, it features loads of veggies and a sweet and tangy dressing. So, it’s close enough to a salad for my purposes. 

It’s crunchy, dense, and wonderfully filling. Plus, it comes together in 20 minutes or less. 

3. Greek Salad

Looking for a salad with a Mediterranean flair? Try this scrumptious Greek salad. It has some of the very best Greek ingredients, including capers, Kalamata olives, feta cheese, and more. 

It’s light, bright, refreshing, and filling. And like most salads, it’s highly customizable to suit your tastes.
