Ingredients

Flour. The base of every baked good. 

Baking soda and baking powder. Leavening agents that lift your batter.

Nutmeg, cinnamon, and cloves. The classic fall seasonings that give the bread its signature fall flavor! 

Canned pumpkin. You can’t call it pumpkin bread without the pumpkin! Canned puree adds both flavor and moisture to the bread. 

Vegetable oil. It makes your bread extra moist!

Tips & Tricks

  • Patience is key. Don’t serve or eat your pumpkin bread fresh from the oven. Let it sit for 30 minutes and the bread will get a deeper flavor and a softer texture. I know it’s tempting, but trust me, the wait is worth it.
  • Don’t overmix the batter. Doing so leads to dry and dense bread. Mix the batter just until the ingredients are incorporated.
  • Don’t overbake the bread. This will lose all the moisture in your bread. The toothpick test is your best ally to ensure doneness.
  • Try your own puree. Canned pumpkin works well for this recipe, but fresh is always best. You can use boiled pumpkin to make it, but roasted pumpkin will give you maximum flavor.
  • To make it look and taste even closer to the original, top the bread with pumpkin seeds.
  • For added crunch, add walnuts or pecans into the mix. Chocolate chips and dried cranberries taste great, too!
  • For a richer flavor, you can substitute butter for half of the oil. That way, you get the flavor from the butter and moisture from the oil.
  • Be sure to grease your loaf pan well to prevent the bread from sticking.

Place the pumpkin bread in an airtight container and store at room temperature or in the fridge. To preserve its moisture, wrap the bread in plastic wrap before placing it inside the container.

How Long Does Pumpkin Bread Last? 

At room temperature, pumpkin bread lasts for up to five days. Of course, it gets a longer lifespan in the fridge – about a week.

If you want to keep it around for much longer, freeze it. Pumpkin bread lasts for up to 3 months in the freezer. 

You can freeze the entire loaf by first double wrapping it in plastic wrap and aluminum foil. Then transfer it into a ziplock bag and freeze.

You can also slice the bread beforehand so that it’s easier to thaw individual servings. Double wrap each slice in plastic wrap and foil, store in a ziplock bag, and freeze.

To thaw, transfer the bread into the fridge overnight. Let it sit at room temperature before serving. Or, you can also microwave it at 30-second intervals until warm.

Be sure to remove the wrappings before you do!

Ingredients

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon 1 baking soda

  • 1 teaspoon 1 ground nutmeg

  • 1 teaspoon 1 ground cinnamon

  • 1 teaspoon 1 ground cloves

  • 1/2 teaspoon 1/2 baking powder

  • 1/2 teaspoon 1/2 salt

  • 4 large eggs

  • 1 cup 1 white sugar

  • 1/4 cup 1/4 light brown sugar

  • 1/2 teaspoon 1/2 vanilla extract

  • 3/4 cup 3/4 canned pumpkin

  • 3/4 cup 3/4 of vegetable oil

Directions

  • Preheat the oven to 350 degrees Fahrenheit. Grease a loaf pan (8 1/2 inch x 4 1/2 inch) with butter or oil spray.
  • In a large bowl, whisk flour, baking soda, nutmeg, cinnamon, cloves, baking powder, and salt.
  • In a separate bowl, beat eggs, white sugar, brown sugar, and vanilla extract at high speed for about 30 seconds. You can use an electric or hand mixer.
  • Stir in pumpkin and oil.
  • Add the dry ingredients and stir until batter is smooth and well-combined.
  • Pour batter into the greased loaf pan and bake for 70 minutes. The top should look dark brown. Insert a toothpick into the center of the bread. If it comes out clean, it’s done.
  • Let the bread cool in the pan for 30 minutes. Invert the pan to release the bread and cut into 1/2-inch thick slices.
  • Serve and enjoy!
