How to Make Million Dollar Potato Casserole

This dish earned its lavish name through a perfect blend of four different dairy ingredients. They transform humble hash browns into something truly extraordinary.

And the buttery Ritz cracker topping adds a perfect golden crunch that makes every bite absolutely unforgettable.

But despite its rich taste, this casserole requires minimal prep work. Just mix, layer, and bake.

1. PREHEAT the oven to 375°F and grease a 9×13-inch baking dish.

2. BLEND the cream cheese until smooth, then mix in the chicken soup, cottage cheese, sour cream, and seasonings.

3. FOLD in the cheese and potatoes, then spread in the baking dish.

4. COMBINE the crushed Ritz crackers with melted butter and sprinkle over the casserole.

5. BAKE uncovered for 50–60 minutes until golden and bubbling. Remove the casserole and let it rest for 5-10 minutes.

6. SERVE garnished with parsley.

  • Use fresh potatoes. Instead of frozen hash browns, peel, dice, and boil 2 pounds of Russet or Yukon Gold potatoes for a few minutes. 
  • Try shredded hash browns. Prefer a different texture? Substitute shredded hash browns for a creamier consistency.
  • Soften the cream cheese. For easier mixing, let the cream cheese sit at room temperature for at least 30 minutes or microwave it for 10–15 seconds.
  • Add mix-ins. Elevate the dish by stirring in cooked bacon bits, diced ham, or sautéed onions.
  • Spice it up. Swap half the cheddar for Pepper Jack cheese. Or add a pinch of cayenne, red pepper chili flakes, or hot sauce for a subtle kick.
  • Make it vegetarian. Instead of cream of chicken soup, use cream of mushroom or cheddar soup.

  • 1 (10.5 ounce) can cream of chicken soup

  • 1 cup cottage cheese

  • 1 cup sour cream

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 2 cups shredded cheddar cheese

  • 1 (32 ounce) bag frozen diced hash brown potatoes, thawed

  • 1 sleeve Ritz crackers, crushed (32 crackers)

  • 1/4 cup butter, melted

  • Fresh parsley or chives, chopped for garnish

Instructions

  • Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray.
  • In a large mixing bowl, blend the cream cheese until smooth. Scrape the bottom and sides of the bowl and mix in the cream of chicken soup, cottage cheese, sour cream, onion powder, garlic powder, salt, and pepper.
  • Stir until well combined. Taste and adjust the seasoning as needed.
  • Gently mix in the shredded cheese and diced potatoes until evenly combined. Then, spread the potato mixture into the prepared baking dish.
  • In a small bowl, mix the crushed Ritz crackers with the melted butter. Sprinkle the buttery cracker mixture evenly over the potatoes.
  • Bake uncovered for 50–60 minutes, or until the top is golden and the edges are bubbling.
  • Remove from the oven and let rest for 5-10 minutes. Sprinkle with fresh parsley or chives, serve hot, and enjoy!
