Some people think they have to be no-bake (including the crust), while others think they’re desserts you keep in the icebox until you’re ready to serve.

I’m in the latter camp, which is why this list of icebox pie recipes has some elements that need baking.

And FYI: an icebox is just an old-fashioned word for the fridge!

Silky and luscious with such a phenomenal taste, this chocolate icebox pie is too good for words.

The only baking you’ll have to do is for the crust. Though if you use a pre-made crust, you won’t even have to do that!

Everything else is just mixing, stirring, and refrigerating, so it’s super simple. Minus the chill time, you should have it ready in 40 minutes or less.

If decadent chocolate pies are your thing, you’ll love it. 

2. Lemon Icebox Pie with Marshmallow Meringue

Are you in the mood for something tart and tangy? If so, try this lemon icebox pie with fluffy marshmallow meringue!

It’s ridiculously tasty, but I should mention – it’s not no-bake.

So again, unless you use a ready-made pie crust, you’ll need to bake the cracker crumb. And then, the whole pie bakes to set the filling.

Luckily, it’s more than worth it!

Oh, and the marshmallow and egg white meringue is genius. So light and sweet, yet it doesn’t weep in the fridge like some recipes do.

Okay, here’s the deal. I could describe just about every pie on this list as “silky and luscious”.

But that would get boring fast. So, from here on out, just assume all these pies are silky and luscious 😉

In addition to the swoon-worthy texture, it also features a gorgeous purple color. And the bright blackberry flavor is out of this world.
