These chicken soups are so good, you’ll want to make them all! But there’s no doubt in my mind you’ll fall in love with this creamy chicken soup!

Ingredients

  • 2 tablespoons olive oil

  • 1 small yellow onion, diced

  • 1 medium carrot, diced

  • 2 celery ribs, diced

  • 3 cloves garlic, minced

  • 1/4 cup unsalted butter

  • 1/4 cup all-purpose flour

  • 4 cups chicken stock or broth

  • 1 cup whole milk

  • 1 1/2 pounds raw chicken breasts, cut into bite-sized pieces

  • 1/2 teaspoon salt, plus more to taste

  • 1/4 teaspoon freshly ground black pepper

  • 1 tablespoon minced fresh rosemary

  • 1/3 cup Parmesan, for garnish

  • Chopped green onions, for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add the onion, carrot, celery, and garlic. Sauté for about 5 minutes, or until the vegetables become tender.
  • Add the butter and allow it to melt. Sprinkle flour over the vegetables and stir well to combine. Cook for 2-3 minutes, stirring constantly.
  • Gradually pour in the chicken stock and milk while stirring. Bring the mixture to a gentle simmer. Let it cook for about 10 minutes, stirring occasionally, until it thickens.
  • Add the chicken and sprinkle salt, pepper, and rosemary. Continue to simmer for about 10-15 minutes, or until the chicken is cooked through.
