Tips For the Best Breakfast Pizza

Follow these tips and tricks to ensure your pizza is perfect:

  • Undercooking does the trick. Slightly undercook the scrambled eggs before adding them to the pizza. They’ll finish cooking in the oven.
  • Avoid soggy veggies! If you’re using vegetables with a high water content, drain well to avoid a soggy crust.
  • Be careful when cracking. Create small wells in the toppings to hold the eggs in place. Crack each egg into a small bowl first for easier transfer onto the pizza.
  • Leave it alone. Allow the baked pizza to cool for 5-10 minutes before slicing to let the cheese and toppings set.
  • Try fun variations. Make it vegetarian with plant-based sausage and veggies. Use a cauliflower crust to go low-carb. Make mini pizzas with English muffins or pita bread. Try a dessert pizza with mascarpone, berries, and cinnamon sugar.

How to Store

These tips will help keep leftover breakfast pizza nice and fresh:

To Store: Place cooled slices in an air-tight container or wrap tightly in plastic wrap and refrigerate for up to 3-4 days. Don’t leave pizza sitting out at room temperature for more than 2 hours.

To Freeze: Wrap cooled slices individually in plastic wrap. Place in a freezer-safe bag or container and freeze for up to 2-3 months. Thaw overnight in the refrigerator before reheating.

To Reheat: For best results, place slices on a baking sheet. Reheat in a 350°F oven for 5-10 minutes until warmed through. You can also reheat individual slices in the microwave for 30-60 seconds. However, the crust may become a bit soggy.

This breakfast pizza is the best part of waking up! It’s loaded with eggs, sausage, cheese, and bacon, for a morning meal to remember.

Ingredients

  • 1 tube refrigerated pizza crust

  • 2 tablespoons olive oil, divided

  • 8 large eggs

  • 1/4 cup milk

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 pound breakfast sausage, cooked and crumbled

  • 8 slices bacon, cooked and crumbled

  • 1 cup shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • 2 green onions, thinly sliced

Instructions

  • Preheat the oven to 400°F. Unroll the pizza crust and press into a greased 15×10-inch baking pan, forming a crust. Brush with olive oil. Bake for 7 minutes.
  • Meanwhile, whisk together the eggs, milk, salt, and pepper in a bowl. Heat the remaining olive oil in a large skillet over medium heat. Add the egg mixture and cook, stirring frequently, until the eggs are scrambled and just set. Remove from the heat.
  • Spoon the scrambled eggs evenly over the pre-baked pizza crust. Top with the cooked sausage and bacon. Sprinkle the Cheddar, Mozzarella, and Parmesan cheeses on top.
  • Return the pizza to the oven and bake for an additional 6-8 minutes, until the cheese is melted and the crust is golden brown.
  • Remove from the oven and let cool for a few minutes. Sprinkle with sliced green onions, cut into squares, and serve warm.

Notes

  • Undercook the scrambled eggs slightly as they will finish cooking on the pizza in the oven.
  • Feel free to customize the toppings based on your preferences. Other options include diced bell peppers, sliced mushrooms, diced onions, or chopped spinach.
  • If you want to prep ahead, you can cook the sausage and bacon, and scramble the eggs the night before. Assemble the pizza in the morning and bake.
  • Breakfast pizza is best served immediately, but leftovers can be stored in the fridge for 3-5 days. Reheat in a 350°F oven until warmed through.

  2. I loved this breakfast pizza! I didn’t add the sausage. I simply brushed the pizza dough with olive oil and followed the recipe using just the cheeses and bacon. OMG!! I will make this over and over!!
