Ingredients

Here’s what you need to whip these babies up:

  • Flour Tortillas: They serve as the “crust” for this pizza.
  • Pizza Sauce: It flavors the quesadillas inside and out.
  • Mozzarella Cheese: You can’t have pizza or quesadillas without the cheese!
  • Parmesan Cheese: It levels up the flavor even more.
  • Pepperoni Slices: To add savory, smoky flavors to the dish.
  • Italian Seasoning: This blend transports your tastebuds straight to Italy.
  • Butter: It helps make the tortillas crunchy!

How to Make a Pizza Quesadilla

Follow these easy steps to make this tasty treat:

  1. Preheat the skillet. Preheat a large skillet over medium heat.
  2. Spread the sauce. Spread a thin layer of pizza sauce over one half of each tortilla. Leave a small border around the edge.
  3. Add the toppings. Sprinkle the sauced half with mozzarella, Parmesan, pepperoni, and Italian seasoning.
  4. Fold the tortillas. Fold the un-sauced half of each tortilla over the toppings to create a half-moon shape.
  5. Cook the quesadillas. Melt the butter in the skillet. Cook the quesadillas for 2-3 minutes per side until golden brown and crispy.
  6. Slice the quesadillas. Transfer them to a cutting board and allow to cool slightly before slicing into wedges.
  7. Serve hot. Serve the quesadillas immediately with extra pizza sauce for dipping. Enjoy!

Tips for the Best Pizza Quesadilla

These easy tips will make your pizza quesadillas top-notch!

  • Go big or go home. Larger tortillas make it easier to fold and flip the quesadillas without losing the filling.
  • Go easy on the sauce! Use a thin layer of pizza sauce to avoid making the quesadilla soggy. Serve extra sauce on the side for dipping.
  • Work some shredding magic. Freshly shredded mozzarella melts better and gives you that perfect cheese pull.
  • Cut up the pepperoni. Halving the pepperoni slices prevents them from pulling out of the quesadilla when you take a bite.
  • Lube ‘em up. For an extra crispy exterior, brush the outside of the tortillas with melted butter or olive oil before cooking.
  • Give them a rest. Let the quesadillas cool for a minute before slicing so the cheese doesn’t ooze out.

How to Store

Here’s how to keep leftover pizza quesadillas fresh:

To Store: Place leftover pizza quesadillas in an air-tight container and store in the refrigerator for up to 3-4 days. For best results, allow them to cool completely before storing so they don’t get soggy.

To Freeze: Assemble and place them in a single layer on a baking sheet, then freeze until solid. Transfer frozen quesadillas to a freezer-safe bag or container and store for up to 1-2 months.

To Reheat: Warm in a skillet over low heat, flipping once, until heated through and crispy again. Or, reheat in the oven at 375°F for 8-10 minutes or in an air fryer at 360°F for 1-2 minutes.

This pizza quesadilla combines two favorites for the ultimate indulgence! Loaded with sauce, cheese, and pepperoni, it’s to die for.

Ingredients

  • 4 large flour tortillas

  • 1 cup pizza sauce, plus more for dipping

  • 2 cups shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese

  • 4 oz pepperoni slices, cut in half

  • 1 tsp Italian seasoning

  • 2 tbsp butter, for cooking

Instructions

  • Preheat a large skillet over medium heat.
  • Spread a thin layer of pizza sauce over one half of each tortilla, leaving a small border around the edge. Be careful not to use too much sauce or the quesadilla will get soggy.
  • Sprinkle the sauced half of each tortilla with mozzarella and Parmesan cheese. Add the pepperoni slices and sprinkle with Italian seasoning.
  • Fold the un-sauced half of each tortilla over the toppings to create a half-moon shape.
  • Melt 1/2 tbsp butter in the hot skillet. Place a quesadilla in the skillet and cook for 2-3 minutes until golden brown on the bottom. Carefully flip and cook the other side until the cheese is fully melted and the tortilla is crispy, another 2-3 minutes.
  • Transfer to a cutting board and repeat with the remaining quesadillas, adding more butter to the skillet as needed.
  • Allow the quesadillas to cool for a minute before slicing into wedges with a sharp knife or pizza cutter. Serve immediately with extra pizza sauce for dipping.

Notes

  • Use large burrito-size tortillas for easier folding and flipping.
  • Cut pepperoni slices in half to prevent them from pulling out of the quesadilla when you take a bite.
  • For extra crispy quesadillas, brush the outside of the tortillas with olive oil or melted butter before cooking.
  • Customize with your favorite pizza toppings, like cooked sausage, veggies, olives, etc. Just don’t overfill or they’ll be hard to flip.
