Stick to your plant-based diet with these easy vegan pasta recipes. From Bolognese and primavera to this 15 minute vegan tomato pasta recipe, you’ll never get bored!

Ingredients

  • 1/2 pound pasta, such as penne

  • 2 cups ripe cherry tomatoes, halved

  • 4 tablespoons extra virgin olive oil + more for drizzling

  • 2 garlic cloves, minced

  • fresh basil leaves, shredded

  • 1-2 teaspoons sea salt, or to taste

  • 1/2 teaspoon freshly ground black pepper, or to taste

Instructions

  • Bring a large pot of salted water to boil over medium heat. 
  • Add the pasta and cook according to the package instructions for al dente finish. 
  • Meanwhile, slice the cherry tomatoes in half and add them to a large bowl. 
  • Add the olive oil, garlic, and basil, and season with sea salt and pepper. Stir to combine. 
  • Once the pasta is ready (al dente), drain it thoroughly and drizzle with olive oil to prevent sticking. Allow the pasta to cool for about 5-7 minutes. Then, add it to the bowl with the other ingredients. Stir well. 
  • Check the taste and add more seasonings if needed. 
  • Transfer the pasta to individual serving plates and top with more fresh basil and olive oil, if desired. Enjoy! 

Notes

  • For a creamy pasta, make a sauce by combining one 6-ounce can of tomato paste and one 14-ounce can of full-fat coconut milk. Mix the cooked pasta with the sauce before adding to the cherry tomato mixture.
