TikTok chicken cobbler is a chicken pot pie made easy. It’s for anyone who craves a classic pot pie but without all the work.

All you need is a baking pan and some simple ingredients: rotisserie chicken, frozen veggies, and cream of chicken soup. 

But the real star of the show is the Red Lobster Cheddar Bay Biscuit mix. Instead of a fussy pastry crust, you’ll top this tasty dinner with savory, cheesy drop biscuits.

This dish is comfort food at its finest, and trust me, once you dig in, you won’t want to stop.

Ingredients

The only specific ingredient here is the biscuit mix, but other than that, this list is pretty simple.

  • Shredded Rotisserie Chicken- The perfect way to use store-bought rotisserie chicken. Shred it or chop it into chunks. You can also cook the chicken yourself.
  • Butter- To add richness and flavor to the chicken. 
  • Peas and Carrots- You can also add other vegetables like corn and green beans.
  • Seasonings- Nothing fancy, just your usual salt and pepper. Garlic or garlic powder is optional.
  • Red Lobster Cheddar Bay Biscuit Mix- This secret ingredient made this TikTok trend an enormous success! Don’t forget you’ll need the seasoning packet as well.
  • Whole Milk- To saturate the biscuit mix. Whole milk provides the richest flavor.
  • Cream of Chicken Soup- You can swap this out for cream of mushroom or cheddar cheese.
  • Chicken Stock- You can use the boxed or canned kind. Or you can make your own.

How to Make TikTok Chicken Cobbler

There’s another reason this chicken cobbler went viral on TikTok: it’s easy to make!

1. Prep.

Preheat the oven. To melt the butter, place it in your baking dish and pop it in the oven as it preheats.

2. Layer the chicken and vegetables.

Spread the shredded chicken into the bottom, then the peas and carrots. Season the layer with salt, pepper, garlic powder, and whatever seasoning you like.

3. Add the biscuit layer.

Whisk together the milk, biscuit mix, and seasoning packet it comes with. Pour it over the chicken and vegetables.

4. Add the cream of soup layer.

Whisk the cream of chicken soup and stock. Pour it over the biscuit layer. 

Again, don’t mix, dump!

5. Bake.

Bake the casserole for 45 to 50 minutes. The total bake time will depend on how thick your casserole is and how hot your oven runs.

Check for doneness as early as 40 minutes. You’ll know it’s done when the biscuit layer is all brown and golden.

The casserole will still be soupy inside right after baking. Let the casserole sit for 10-15 minutes. This will give the sauce time to thicken.

Tips for the Best Chicken Cobbler

Follow these tips and tricks for the perfect chicken cobbler!

  • Don’t be tempted to mix the layers. The whole concept here is to pour and bake. Don’t worry; the layers will meld together as they bake.
  • Shred the chicken with a stand mixer. You can also use two forks, but it’ll take more time.
  • Can’t find Red Lobster biscuit mix? Use 2 cups Bisquick, 1 cup shredded cheddar, and 1 teaspoon garlic powder instead. Or any other biscuit mix you have on hand.
  • Total baking time will vary. It depends on how thick your casserole is and how hot your oven is. Check for doneness around 45 minutes to avoid overbaking. The dough on top should be golden brown.
  • Allow the casserole to rest. Once baked, let it sit for 10 to 15 minutes before serving. This will allow the sauce to thicken up.
  • Make it cheesy. I love cheesy casserole. If you do, too, add 1/2 cup of shredded cheddar to the biscuit mix. Or, you can top the cobbler with shredded cheese and broil briefly after baking for crispy, cheesy bits.
  • Make it your own. Try it with your favorite spices, different vegetables like peppers or mushrooms, or crispy fried onions on top. The possibilities are endless!

How to Store

When I first tried this recipe, there were no leftovers. And there were only three of us at home that day. It’s that good.

But in case you end up with leftovers, here’s how to store it:

To Store:

Allow the chicken cobbler to cool and store it in an airtight container. Refrigerate for up to 4 to 5 days.

Reheat in the oven at 350 degrees Fahrenheit until warm and crisp.

To Freeze:

Freeze the casserole for up to 3 months, covered well in plastic wrap and foil.

Let it thaw overnight and reheat in the oven at 350 degrees Fahrenheit until warmed through.
