Tips For the Best Pancake in a Mug

Forget hovering all morning over a hot griddle. This pancake in a mug is so simple!

Still, every microwave is different. So follow these tips to ensure your pancake turns out perfectly fluffy and fully cooked.

  • Measure accurately. It’s easy to mismeasure when making pancakes. So be sure to use proper measuring cups and spoons for the best texture and flavor.
  • Mug size. I used a smaller mug, which is why mine puffed up. If you've never made it before, stick with 8 ounces or larger.
  • Cook incrementally. Every microwave cooks a little differently. Start with 60 seconds of microwave time and increase in 10-second increments if needed.
  • Avoid overcooking. Check the pancake after the initial cooking time to prevent it from becoming rubbery or dry.
  • Let it cool. Remember, the mug and pancake will be hot! So it’s best to allow the pancake to cool for a minute or two before eating.
  • Add toppings. No pancake is complete without your favorite toppings! You can go with the classic butter and maple syrup. Or try fresh berries, chocolate chips, sliced bananas, chopped nuts, yogurt, or whipped cream.

Ingredients

  • 1 tablespoon butter

  • 1 tablespoon granulated sugar

  • 6 tablespoon milk

  • 1/2 teaspoon vanilla extract

  • 1/2 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1 pinch salt

Instructions

  • Melt the butter in a microwave-safe 8 or 12 ounce mug in 15 second intervals until smooth.
  • Add the sugar, milk, and vanilla, and mix until well combined.
  • Stir in the flour, baking powder, and salt. A few small lumps are okay.
  • Microwave on high for 60 seconds, or until the pancake puffs up and is cooked through. Start with 60 seconds and add more time if needed in 10-second increments.

Notes

  • Deflating is normal. The pancake may naturally deflate slightly as it cools. Don’t worry, it won’t affect the flavor.
  • Mug size. I used a smaller mug, which is why mine puffed up. If you've never made it before, stick with 8 ounces or larger.

  2. Doug says:

Can this be made with store bought pancake mix?
What would the instructions be for it?

    1. NaTaya Hastings says:

      Hi, Doug!

I’ve never made this with storebought pancake mix, but I don’t see why you couldn’t.

Here’s how I would adjust the recipe:

      Ingredients:
1/3 cup pancake mix (approximately! Adjust based on the mix’s density and your preference.)
2-4 tablespoons milk (start with 2 tablespoons and add more if needed)
      1/2 teaspoon vanilla extract (optional)
      1/2 tablespoon melted butter (optional)

      Instructions:
      1. Combine everything in a microwave-safe mug. Stir until smooth.

      2. Microwave on high for about 1-2 minutes, depending on your microwave’s power and the mix’s density. Start with 1 minute and check if it’s cooked through. If not, add more time in 10-second increments.

      3. Remove the mug from the microwave, and let it cool for a few minutes. Top with your favorite pancake toppings, and enjoy!

🙂 Again, this is my guestimation of the recipe, having never made it myself. I’d love to know how it turns out if you try it. 🙂
