It’s dangerously delicious but perfectly portioned into one delicious serving. Because, let’s be honest, self-control around snickerdoodles isn’t a thing.

  • All-Purpose Flour: The base of the cake. It adds structure and binds the ingredients quickly.
  • Baking Powder: Causes the cake to rise into an airy, fluffy treat. 
  • Granulated Sugar: I use it in both the cake and the topping. It adds sweetness, moisture, and helps create a tender crumb.
  • Ground Cinnamon: Infuses the cake with the signature snickerdoodle flavor. 
  • Milk: The moisture helps create the perfect batter consistency. Set it out early for easier mixing. I use whole milk for a better flavor and texture.
  • Unsalted Butter: Adds richness, moisture, and that classic buttery flavor. I use unsalted butter to control the salt. 
  • Pure Vanilla Extract: Adds depth with its complex floral, sweet, warm notes. I prefer pure vanilla because artificial can leave a chemical aftertaste.

How to Make Snickerdoodle Mug Cake

When those snickerdoodle cookie cravings strike, this single-serving mug cake is the perfect fix. In under 5 minutes, you’ll have a warm treat I swear tastes like the classic cookie. No oven necessary, just a quick zap and it’s ready!

1. Make the batter. Mix the dry ingredients in a small bowl. Then, add the milk, butter, and vanilla. Stir gently, and don’t overmix. 

2. Assemble. Spoon a generous portion of cake batter into the bottom of a large microwave-safe mug. Next, sprinkle the cinnamon-sugar topping over the batter. Repeat these layers, finishing with the cinnamon-sugar mixture.

3. Microwave. Microwave on high for 1 to 1 1/2 minutes. Check for doneness at the 1-minute mark to avoid overcooking. 

4. Serve. Cool for 2 to 3 minutes. Serve warm and enjoy!

Tips for the Best Snickerdoodle Mug Cake

Mug cakes are super easy to make and come in so many tasty flavors (red velvet anyone?). But I still have a few tips to ensure this cozy treat turns out just right.

  • Pick the proper mug size. The mug should hold at least 14 ounces, but 16 ounces is even better. A larger mug will prevent overflow when the cake rises. 
  • Temp your ingredients right. I use room-temperature milk and slightly cooled melted butter. This helps ensure they mix well and the cake has a great texture. 
  • Adjust the cinnamon. Use more or less in the batter and topping based on your preferences. 
  • Don’t overmix! Be gentle when adding the wet ingredients to the dry ones. If you overmix them, your cake will turn out tough and rubbery. 
  • Check for doneness early. Microwaves vary in wattage. So be sure to check for doneness early and add additional time as needed.
  • Moisten with sweetness. Did your cake turn out dry? I recommend poking a few holes in the top. Then, drizzle it with warm honey or maple syrup for extra moisture. 
  • Make it your own. Try adding white chocolate chips or a cream cheese swirl. Apple pie or pumpkin pie spice is another tasty addition. 
  • Add a topping. Top with a scoop of vanilla ice cream, whipped cream, or caramel sauce for an indulgent treat. You can also sprinkle a light dusting of extra cinnamon sugar on top while still warm.

The longer it sits, the drier it gets. Although, I doubt you’ll have leftovers. But if you do, here’s how to keep them fresh:

To Store: Cover the mug tightly in plastic wrap or aluminum foil. Refrigerate for up to 24 hours. For the best results, enjoy within 2 hours of microwaving. 

To Reheat: Pop the uncovered mug in the microwave and microwave for 10 to 15 seconds.

  • 1/4 teaspoon baking powder

  • a pinch of salt

  • 1 1/2 tablespoons granulated sugar

  • 1/4 teaspoon ground cinnamon

  • 1/4 cup milk, room temperature

  • 2 tablespoons unsalted butter, melted and slightly cooled

  • 1/2 teaspoon pure vanilla extract

  • For the Cinnamon Sugar Topping
  • 1 tablespoon granulated sugar

  • 1/4 teaspoon ground cinnamon

Instructions

  • In a small bowl, thoroughly combine the flour, baking powder, salt, granulated sugar, and cinnamon. Ensure the mixture is evenly blended with no visible streaks of individual ingredients.
  • Add the milk, melted butter, and vanilla extract to the dry mixture. Gently stir until the batter is just combined, and no dry streaks remain. Be careful not to overmix.
