23 Best Campari Tomato Recipes

Discover a new level of freshness with these Campari tomato recipes.

Sure, you could make these recipes with any old tomato. But Campari tomatoes are the best.

Campari tomatoes are known for their fantastic flavor. They’re sweet and robust, with a low level of acidity.

Since they’re grown hydroponically, you can get them year-round, and at a good price!

You’ll know them by their bright red color, perfect roundness, and small-ish size.

Most importantly, they’re always attached to the vine.

So, they truly are the freshest, reddest tomatoes in the supermarket.

Here are 23 of my favorite Campari tomato recipes.

1. Tomato Olive Flatbread

Did you know that the first “pizzas” were really just flatbread with stuff on them?

And clearly, they were loved. I mean, they basically launched a food revolution.

So, if you need a quick, but utterly delicious meal, look no further.

Bright Campari tomatoes, rich olives, and gooey mozzarella star in this show.

They’re accompanied by garlic, onions, salt, pepper, and oregano.

Everything sits on top of a deliciously soft piece of garlic naan bread.

This dish is toasty, melty, incredibly flavorful, and fresh.

2. Cucumber Tomato Salad

I can’t lie, this is one of my favorite salads.

Every bite bursts with savory flavor and fantastic texture. It’s the perfect way to add freshness to every meal.

And it’s incredibly simple to make.

Seriously, you only need Campari tomatoes, an English cucumber, red onion, lemon, and herbs.

You also add olive oil, garlic, salt, and pepper.

3. Tomato Bruschetta

Tomato bruschetta is Italy’s finest appetizer. Well, one of them anyway.

Technically bruschetta is an antipasto consisting of garlic-and-oil-rubbed crusty bread with stuff on it.

But the most common rendition features a topping of tomatoes, onions, balsamic vinegar, and basil.

And that’s exactly what you’ll make with this recipe. It’s classic and fantastic.

4. Kale Gnudi with Campari Tomato Sauce

Unless you’re Italian (or frequently visit Italian restaurants), you’ve probably tried gnocchi but not gnudi.

Gnudi is the less common cousin of gnocchi.

Gnudi is, like gnocchi, a type of dumpling. But instead of potatoes, gnudi is made with cheese, spinach, and semolina.

They’re light and pillowy and full of flavor.

Now, this recipe isn’t totally classic. It calls for flour and kale instead of spinach and semolina.

But the texture is just as wonderful, and don’t get me started on the taste.

Everything is cooked in a simple Campari tomato sauce that highlights the tomato beautifully.

5. Tomato Basil Soup

I love Campbell’s as much as anyone, but there’s something special about homemade soup.

It’s like bringing a Michelin-star chef into your home.

It’s so easy, but the fresh ingredients add so much flavor.

The key is roasting the veggies first, in this case, Campari tomatoes and onions.

The veggies become so much richer, sweeter, and fuller.

And when you add good quality canned tomatoes, basil, seasonings, and stock, it’s even better.

Now all you need is some delicious grilled cheese sandwiches!

6. Tomato Galette

A galette is a type of free-form pie or tart that’s not made in a pie pin.

Galettes are rustic and beautiful and delicious. And this tomato version is no exception.

This galette features a rough, short-crust pastry dough.

The filling is made with fresh Campari tomatoes, cream cheese, feta, garlic, basil, and seasonings.

It’s simple and scrumptious. And in the end, it kind of looks like a pizza!

7. Fresh Tomato Salsa

Put the store-bought jar away! There is nothing better than fresh salsa. And this pico de gallo-style salsa is absolutely the best out there.

You only need fresh tomatoes, onions, cilantro, jalapeños, salt, lemon juice, and lime juice.

It’s simple and delicious. My only recommendation is to also add some garlic.

Because salsa always needs garlic.

8. Angel Hair Pomodoro

This may be the most simple pasta dish you will ever make. But don’t be fooled by its simplicity.

And the Campari tomatoes are truly the star of the dish.

They’re highlighted by garlic and some seasonings. But their tomato flavor really shines through. It’s fantastic.

9. Tomato and Burrata Gnocchi

I already love gnocchi more than pasta (I know, I know… blasphemy), but this dish? Is even better than your average gnocchi dish.

The gnocchi is tender, and the Campari-and-garlic sauce is incredibly flavorful.

But what makes this dish even more special is the burrata.

The outside feels and acts like regular cheese, so it gets all melty and gooey.

But the inside is like ricotta, so it’s also incredibly creamy. It’s amazing.

10. Tomato and Goat Cheese Orzo with Fresh Herbs

Roasted tomatoes and goat cheese go together as well as peanut butter and chocolate.

And that flavor combo, plus herbs and orzo pasta, equals your new favorite weeknight dinner.

11. Shrimp Tomato Pasta Sauce with White Wine

Are you tired of boring beef ragu-style pasta sauce?

Well, it’s time to switch up your pasta game! And this fusion shrimp pasta sauce is the way to do it.

It’s light yet richly flavored, bright, and totally tasty! The tomatoes work fabulously with the white wine.

And chicken bouillon adds a special little something-something.

12. Goat Cheese Stuffed Tomatoes

You’ve heard of stuffed peppers, but have you heard of stuffed tomatoes?

Well, you have now! And yes, they are as delicious as they sound.

Each fresh tomato is stuffed with a mouthwatering mixture of goat cheese, ricotta, and parmesan.

But wait, there’s more. The mixture also contains honey and Italian seasoning.

Everything is topped with crunchy, buttery toasted breadcrumbs.

Every little bite will take your mouth on a whirlwind adventure of flavor and texture.

13. Chicken Caprese

Caprese salad is a delicious combination of mozzarella Bufala, fresh tomatoes, and basil.

It’s drizzled with olive oil, balsamic vinegar, and salt. It’s fantastic!

But this recipe kicks it up a notch!

You start with seasoned, butter-and-oil-sauteed chicken breasts.

Then, you spoon a generous amount of basil pesto over the top.

Then, you top them with slices of mozzarella and fresh tomatoes.

Bake it for about 10 minutes or until the chicken is done. Everything will be gooey, saucy, and delicious.

To finish it off, drizzle everything with a balsamic glaze.

14. Tomato Panzanella Salad

Watch out bread pudding, panzanella is coming for you!

This deliciously carb-filled salad is like if you left croutons in your salad overnight. But on purpose.

It’s a Tuscan classic that features soft bread, tomatoes, onions, cucumber, and feta. Everything is tossed in a mouthwatering basil vinaigrette.

15. Tomato and Arugula Pizza

This simple pizza is a twist on pizza Margherita. It’s cheesy, saucy, and wonderfully tomato-flavored.

It’s topped with a fresh arugula salad that adds a delicious nuttiness to the dish.

16. Blistered Tomato, Mozzarella, and Arugula Salad

The secret to taking a salad from basic to amazing is cooking your veggies.

In this case, you blister the tomatoes in a cast iron skillet. This brings out their sweetness and it’s heavenly.

Toss them with fresh arugula, pine nuts, and salty mozzarella. Then drizzle everything in a tangy balsamic vinaigrette.

17. Roasted Tomato Caprese Pasta

Sweet, roasted, garlicky tomatoes, cheesy mozzarella, balsamic, and fresh basil in one pasta dish?

What could be better?! You’ll love this simple pasta recipe.

18. Tomato Appetizer with Feta

Need a snack or appetizer in a hurry? Well, turn to this fresh and easy dish.

Simply take halved Campari tomatoes and top them with crumbled feta.

Drizzle olive oil over the top and sprinkle on some red pepper flakes. Done and delicious!

19. Chicken Pesto Tomato Bites

These bites may be small, but their flavor is mighty!

Each little tomato is full of shredded chicken, pesto, and mayonnaise.

They’re also topped with mozzarella cheese. You can’t beat that!

20. Caprese Stuffed Salmon with Balsamic Roasted Tomatoes

If you want to wow your guests, you must make this impressive salmon dish.

It’s super easy to make and it’s so darn tasty!

It features baked salmon, stuffed with slices of tomato and mozzarella.

Everything is drizzled in a brown sugar and balsamic glaze.

Every bite of this dish is savory, with a hint of sweetness. And every bite will have your guests raving!

21. Italian Tomato Salad

The Italians have perfected the art of simple food. Take this salad as proof.

It’s made with Campari and grape tomatoes, plus shallot, garlic, basil, and oregano.

Everything is tossed in olive oil and salt. It’s simple but divine.

22. Tomato Tart

Much like the galette from earlier, this tomato tart is a bit rustic but fabulous.

And like the galette, this tart is loaded with cheese, tomatoes, herbs, seasonings, and garlic.

But their main difference is small but distinctive.

The galette is made with shortcrust pastry. It’s delicious, but it’s thick.

Like traditional pie crust, there’s some flakiness but not a ton.

This tart is made with puff pastry. So, it’s even more flaky, crunchy, buttery, and delicious.

23. Quick-Roasted Tomatoes with Garlic and Thyme

It’s back to basics with this roasted tomato recipe.

Everyone should know how to roast veggies. Which is why I included it on this list.

These tomatoes are flavorful, sweet, and delicious. They’re a fantastic vegetarian side dish.

But this is also a great way to start sauces, soups, and more!

These delicious tomatoes are quick-roasted.

So, you cook them at a higher temperature for a shorter amount of time. I find quick-roasting works very well with all veggies.
