If you think soups are just for a light lunch or starter, think again!

Beef is a terrific way to transform a light dish into something impossibly hearty. And I’m not just talking about your grandma’s classic beef stew, either!

These beef soup recipes range from brothy pho and Chinese noodles to hearty meatballs and dreamy pasta dishes.

Whatever you choose, one bowl will be more than enough to fill you up!

Easy Vegetable Beef Soup and More!

1. Old-Fashioned Vegetable Beef Soup

If gloomy winter days have you in a funk, this old-fashioned vegetable beef soup is a great way to turn that frown upside down.

This classic recipe packs a double helping of protein from browned beef and beans, making it incredibly filling.

Stew it low and slow for 5 hours (filling your home with mouth-watering aromas), and serve!

2. Vietnamese Pho

I once tried pho (pronounced ‘fuh’) at a Vietnamese restaurant a few years ago, and my life has never been the same.

There’s something about that broth that is magical. It’s hearty and buttery while still feeling light.

Needless to say, the key to fantastic pho lies in the broth.

So, make sure that you incorporate the bones. The marrow adds a punch of richness and added meatiness.

Storebought marrow works in a pinch, but making your own broth turns this from great to incredible.

3. Texas Cowboy Soup

This soup is part chili, part vegetable soup, and all cowboy! It has a light and satisfying beef broth base amplified by a hearty helping of bacon.

It earns its signature kick from added chili powder and cumin with a hint of smokiness from the bacon.

It’s insanely filling with hearty root vegetables and an extra helping of protein from the beans.

It whips together in a flash and cooks low and slow all day. It’s a great way to feed a crowd of hungry cowboys.

4. Chinese Beef Noodle Soup

Hungry for Chinese flavors but want something a little lighter?

This Chinese beef noodle soup packs all of the classic Chinese flavors without the heavy after-bloat.

The simple beef broth base uses traditional Chinese seasons, including soy sauce, ginger, fish sauce, and star anise.

It also calls for Chinese 5-spice that lifts those flavors like you won’t believe.

5. Bulalo

Bulalo is a classic Filipino dish that’s as delicious as it is affordable.

The star of this dish is the beef shank, which is notoriously tough. That said, it’s packed with flavor and is incredibly affordable.

Of course, it takes some time to cook that tough cut of meat until it’s tender, but it’s worth it.

Cook it in the broth for about 1.5-2 hours, or pop it in a pressure cooker for around 30 minutes.

Bulalo is a beautiful dish made with relatively few ingredients, which is ideal if you’re on a budget!

6. Vegetable Beef Soup

This hearty vegetable beef soup has all the staples of a winter warmer: browned beef, root vegetables, and savory Italian seasoning.

To save on money, swap out fresh vegetables for frozen.

Just be sure to only add them in at the end. That way, they’ll heat up without turning to mush

This soup is budget-friendly and jam-packed with nutrition, so go ahead and have a second helping.

7. Slow Cooker Beef And Barley Soup

Is it even winter without beef and barley soup bubbling on the counter?

If your Crockpot isn’t running at least three times a week already, it’s time to dig it out of the cupboards!

And this recipe is a terrific place to start.

You’ll brown the beef and then toss it into the slow cooker with tomatoes, stock, and ample seasonings.

Cook low and slow for 8 hours, and boom. Dinner is ready!

8. Carne En Su Jugo

The title of this dish sounds fancy, but it simply means ‘meat in juices.’

This soup is an excellent option to keep protein high and carbs low. And with very few extra spices, the meat is the real star.

What I love most about this straightforward dish is the added kick of the jalapeños. But, of course, you could leave them out if you prefer.

9. Slow Cooker Taco Soup

Taco soup is my go-to meal when I crave Mexican food, but I want to eat light.

It still incorporates all of those delicious taco night staples, including beef, beans, corn, and salsa. It’s just not as heavy.

Cook it on low for around 6 hours, and top with your favorite taco pairings. I love a squeeze of lime, some avocado, and a handful of tortilla shells.

10. Italian Wedding Soup

Beef soups don’t always have to be thick and hearty.

And this light Italian wedding soup, with its golden chicken and beef broth base, is proof!

While the pasta and spinach are nourishing, the homemade meatballs elevate this simple dish to the next level.

Just be sure to keep them small. That way, they’re easy to eat from a soup spoon.

11. Easy Hamburger Soup

This hamburger soup marries the summertime flavors of a BBQ into a dish that warms your bones.

Featuring hearty vegetables such as corn, potatoes, and green beans, the whole thing sings with rich beef brothy goodness.

The key to excellent hamburger soup is browning the ground beef first. That gives it some texture and a boost of beefy flavor.

Add it to the pot of simmering vegetables, and cook for around 20 minutes.

It’s super quick and easy – perfect for a hectic weeknight!

12. Albondigas Soup

Italy doesn’t have the market cornered on meatballs! So why not try this recipe from south of the border?

Albondigas soup is a fancy Mexican meatball soup (albondigas translates to ‘meatball’).

It’s similar to Italian wedding soup but uses classic Mexican flavors for a spicy kick.

You’ll include potatoes, tomatoes, and zucchini that simmer in delicious chicken stock.

For added heat, throw in some spicy chilis. And to lift the flavors of the plate, add a squeeze of fresh lime juice.

13. Slow Cooker Asian Beef Noodle Soup

Are you looking for a light, easy, and impossibly filling recipe? You just found it!

Beef brisket is notoriously tough, but that’s where the slow cooker comes in.

After about 8 hours on low, that tough cut of beef will melt in your mouth.

14. Nilagang Baka (Filipino Beef Soup with Vegetables)

This classic Filipino soup is simple, affordable, and packed with rich flavor.

When selecting the beef, it’s recommended that you go for something with the bones.

The marrow infuses the broth with rich, buttery flavors that you’ll miss without it.

Add cabbage, corn, green beans, and potatoes into a stockpot with beef and cook for 30 minutes. It’s that easy!

15. Corned Beef and Cabbage Soup

If I could have corned beef for every meal – I would!

And if you have some leftovers from St. Patrick’s day, this soup is a great way to repurpose them.

It walks a perfect line between salty and savory, and the cabbage and carrots add balance.

Plus, the flavor from the corned beef is so potent, you don’t even need stock (use 6 cups of water instead).

16. Mom’s Meatball Soup

This soup is deceptively filling. So, while the broth looks light and refreshing, it contains many filling ingredients.

And the best part? You don’t even need to pre-cook the meatballs! Just drop them in the pot, and they’ll cook right in the bubbling stock.

17. Taiwanese Beef Noodle Soup

There are few things as satisfying as this Taiwanese beef noodle soup on a cold day.

It has all of the hallmarks of a filling dish, too. From the tasty beef and chewy noodles to the touch of spice, it’s beyond heartwarming.

It’s simple, super affordable, and oh-so-satisfying.

18. Cabbage Roll Soup

Cabbage rolls are the unofficial spokesman for comforting winter cuisine. But man, are they tedious!

Luckily, this soup has all the same fantastic flavor without the boring prep work.

Think of it like deconstructed cabbage rolls. Heck, they’d charge double for that in some restaurants!

19. Beef and Macaroni Soup

Few things pair as well as beef and macaroni.

(Okay, cheese is probably at the top spot!)

But this beef and macaroni soup is affordable, family-friendly, and loaded with veggies.

To keep costs low, add a bag of frozen vegetables at the end of the cooking process for added texture and flavor.

20. Caldo De Colita de Res – Oxtail Soup

Oxtail soup is the ultimate comfort food you never knew you needed.

The broth is rich in flavor and comes together in a snap. And since oxtail doesn’t have much meat, it’s ideal for making broth.

The bone marrow infuses into the broth, giving it an insane flavor.

It’s important to note that oxtail is surprisingly expensive. While it’s not exactly a premium cut of beef, the popularity of this cut makes it slightly more costly.

For an indulgent soup, however, it’s worth the price!
