Ingredients
- Steak: Sirloin is my go-to for steak bites. It offers a perfect balance of flavor and tenderness.
- Sea Salt: It brings out the meat’s natural flavors, making each bite even more delicious.
- Black Pepper: It adds a subtle heat to complement the buttery garlic.
- Olive Oil: It’s key for searing the steak, adding a hint of richness.
- Butter: It melds with garlic to create a sauce that’s simply out of this world.
- Garlic Cloves: They’re the heart of the dish, infusing every steak bite with aromatic goodness.
- Fresh Parsley: It adds a fresh touch, brightening up the dish.
How to Make Garlic Butter Steak Bites
Ready to make some steak bites? Let’s get cooking!
1. DRY & SEASON. Pat the steak dry and season with a generous pinch of sea salt and cracked black pepper. Cut into cubes.
2. SEAR. Heat oil in a skillet over medium-high heat. Add the steak and sear for 2-3 minutes on each side. Remove and set aside.
3. MAKE THE GARLIC BUTTER. Melt the butter in the same skillet over medium heat. Sauté the garlic until golden.
4. COAT. Return the steak to the skillet and mix with the garlic butter.
5. GARNISH & SERVE. Sprinkle parsley on top. Serve hot and enjoy!
Recipe Tips and Variations
Elevate your garlic butter steak bites with these simple tweaks and tips.
- Ditch the jarred garlic. Fresh garlic enhances the dish significantly. Use pre-peeled cloves to save time without sacrificing taste.
- Select the right steak. For flavor and tenderness, opt for sirloin, ribeye, or strip steak. Trim any excess fat first.
- Set it out early. Bring the steak to room temperature 30 minutes before cooking to ensure tenderness.
- Prep the steak properly. Dry the steak with paper towels before cutting for a better sear and crust formation.
- Don’t crowd the bites! Cook in batches to ensure proper browning instead of steaming.
- Keep a watchful eye. Steak bite doneness varies by size. Check the temperature with a thermometer: 125°F for rare, 135°F for medium-rare, etc.
- Give them a rest. Let steak bites rest post-cooking to keep them juicy and tender.
- Experiment with flavors. Add herbs like thyme or spices like paprika to the garlic butter for variety.
- Add extra veggies. Toss in zucchini, bell peppers, or onions after removing the steak. Sauté until crisp, then mix with the steak for extra flavor and color.
How to Store
If you have leftover steak bites (which is unlikely!), follow these steps to store them:
To Store: Store leftovers in an air-tight container and chill in the fridge for up to 3 days.
To Reheat: Warm them up in a skillet on low heat or give them a quick zap in the microwave.
What to Serve with Garlic Butter Steak Bites
You can pair these steak bites with a variety of sides. Here’s what works well:
- Mashed Potatoes – The creamy texture complements the juicy steak bites, absorbing the garlic butter beautifully.
- Parmesan Roasted Broccoli – Its crispness and slight char add a fresh contrast to the rich, savory steak.
- Garlic Bread – It’s perfect for scooping up any leftover garlic butter, adding a carb delight to your meal.
- Rice – A simple bed of rice catches all the flavorful sauce, making each bite a perfect mix.
- Crab-Stuffed Mushrooms – They bring an earthy flavor that pairs wonderfully with the meatiness of the steak bites.

Love you recipes, Kim! I cook, each Thursday dinner, for the students (11 currently, the on-duty staff (2), and their family members (3 are my grandchildren).
I am planning to offer the Garlic-Butter Steak Bites, for dinner, in a few weeks. You suggest Sal, to enhance the flavor of the steak (We raise our own beef, and the flavor is so much better that the stuff that is offered in the store).
I Googled it, and am finding plates made of Sal Leaves. Another option was, Salal, which grows wild in the hills around us.
Can you point me where it is available?
Thank you, again, for you recipes. I have used that often, over the last four years.
Hi Steven!
I think that was a typo on the page. It’s meant to be “salt”
Sea salt is my top choice for steak because it leaves a nice crust.
And smoked sea salt is extra tasty with beef!
sound great. making tonight. At the butter stage I’m gonna add sliced shrooms and onions.
l love your recipes! I’m saving the ones i know i’ll make.
I like the idea of cutting the steak up into cubes or slices instead of just frying up a steak.
Thank you for the idea
