Make the holidays even brighter with these Christmas potato recipes! From mashed to these Christmas roast potatoes, you’ll want to try them all.

Ingredients

  • 5 -6 pounds Maris Piper or Yukon Gold potatoes

  • 10 sprigs rosemary

  • 12 sprigs thyme

  • 1 head garlic (about 12 cloves)

  • 1 pound tallow or lard

  • 2 cups olive oil or canola oil

  • 2 teaspoons salt

  • 5 leaves sage

Instructions

  • Preheat the oven to 350°F (180°C) and line a roasting tray with foil.
  • Peel and cut the potatoes into evenly sized quarters, then rinse with cold water.
  • Transfer the rinsed potatoes to a large pot and cover with cold water. Add 2 rosemary and thyme sprigs and 2 smashed cloves of garlic.
  • Turn the heat to medium-high and bring the water to a boil. Let the potatoes cook for 20-30 minutes, until they’re soft.
  • Drain the potatoes and leave to steam in the colander.
  • Halfway through cooking the potatoes, break the tallow/lard into chunks and scatter them in the roasting pan. Drizzle the oil over the top and place the tray in the oven.
  • Heat the oil for 15 minutes, then carefully take the tray out of the oven.
  • Very carefully pour the potatoes into the tray. Use a spatula to toss them in the hot oil – it will spit so stand back.
  • Add the remaining garlic cloves then return the tray to the oven for 1 hour. Stir every 20 minutes so each side is crisp.
  • While the potatoes cook, make the herb salt.
  • Grind the salt and sage with a couple of rosemary and thyme sprigs until it’s a fine powder.
  • After an hour in the oven, add the remaining 6 rosemary and 8 thyme sprigs, stir well, then cook for another 20 minutes.
  • Take the tray out of the oven and carefully transfer the potatoes to a paper towel lined plate.
  • Season with the herb salt (only use as much as needed). Then, serve and enjoy!
