You may have seen recipes with notes about NOT substituting pumpkin pie filling for pumpkin puree and vice versa. That’s because the two aren’t the same.

  • Pumpkin puree is simply pumpkin that’s been peeled, cooked, and pureed.
  • Pumpkin pie filling is like a version of pumpkin puree with added fall spices. 

It’s really that simple. The added spices give pie filling a sweeter, more spice-filled flavor than pumpkin puree. 

How to Store Leftover Pumpkin Puree

Store leftover pumpkin puree in any of the following ways:

  • In airtight containers. Transfer the leftover pumpkin puree to an airtight, lidded container. Place it in the fridge for up to 7 days or the freezer for up to 3 months.
  • In freezer bags. Transfer the puree to Ziploc bags, leaving half an inch of space at the top. Lay the bag flat and remove as much air as possible before sealing it. Place it flat in the freezer for up to 3 months.
  • In cubed-form. Spoon the puree into ice trays. Then, stick them in the freezer for 2 to 3 hours to freeze. Once frozen, remove the cubes from the ice trays and store them in a freezer-safe bag or airtight container for up to 3 months.

These tasty pumpkin puree recipes prove how versatile it is! If you need to make homemade pumpkin puree to make them, here’s how!

  • Equipment
  • baking sheet

  • parchment paper

  • Ingredients
  • 2 small to medium-sized pumpkins

  • salt (optional for seasoning)

Instructions

  • Preheat the oven to 400 degrees Fahrenheit, and line a baking sheet with parchment paper.
  • Wash the pumpkins thoroughly, then pat them dry. Cut each in half from stem to end, but DO NOT cut through the stem. Rotate each pumpkin and cut them in half from stem to end on the opposite side. Pull the two halves of each pumpkin apart.
  • Remove the pumpkin seeds and the stringy pulp.
  • Lightly season the inside of each pumpkin half with salt. Then, place them cut side down on the baking sheet. Roast for 45 to 60 minutes or until the pumpkin’s flesh is soft and easily pierced with a fork.
  • Remove the pumpkin halves from the oven and allow them to cool until they’re cool to the touch.
  • Remove the flesh from the pumpkin halves with a spoon. Transfer the flesh to a food processor and process for 3 to 5 minutes until the mixture is smooth. Stop and scrape the sides as necessary. (You may need to process the pumpkin in batches.)
  • If needed, strain the pumpkin through a fine mesh strainer to get rid of excess liquid. Then, let it sit for 30-60 minutes in a cheesecloth over a bowl. This may not be necessary if the pumpkin is thick enough after pureeing.
  • Use immediately or store using the storage methods outlined above.

Notes

  • 2 whole, small pumpkins makes about 5 cups of puree
  • Check for doneness at 45 minutes, as oven temperatures and pumpkin sizes vary.
