The next time you get a craving for something sweet, check out these cherry desserts. Or better yet, make this scrumptious cherry pie recipe!

Ingredients

  • For the Pie Crust
  • 2 1/2 cups all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon sugar

  • 1 cup unsalted butter, cold and cut into small pieces

  • 1/4 to 1/2 cup ice water

  • For the Filling
  • 4 cups fresh or frozen cherries (pitted)

  • 1 to 1 1/2 cups granulated sugar (depending on sweetness of cherries)

  • 4 tablespoons cornstarch

  • 1/8 teaspoon salt

  • 1 teaspoon vanilla extract

  • 1 tablespoon butter, cut into small pieces

  • For the Top
  • 1 tablespoon milk

  • 1 tablespoon granulated sugar

Instructions

  • Make the Pie Crust: Combine the flour, salt, and sugar in a food processor. Pulse a few times to blend it well.
  • Add the butter cubes and pulse until the mixture resembles coarse breadcrumbs.
  • With the machine running on low, add the ice water (use a teaspoon) through the feed tube.
  • Stop as soon as the pastry starts to form a ball. It should be shaggy but sticky.
  • Divide the dough in two, then gently press each one into a disc and wrap it in plastic.
  • Refrigerate the pastry for at least 1 hour.
  • Prepare the Filling: In a large bowl, mix the cherries, sugar, cornstarch, salt, and vanilla extract. Let it sit for 10 minutes.
  • Assemble the Pie: Preheat the oven to 375°F (190°C).
  • Roll one of the dough disks on a lightly floured surface to fit a 9-inch pie dish.
  • Use the rolling pin to gently lift the pastry over the dish. Then, press it into the dish with the back of your hand.
  • Spoon the cherry filling into the crust and dot with the pieces of butter.
  • Roll out the second dough disk and place it over the filling.
  • Trim and crimp the edges, then make slits in the top to allow steam to escape.
  • Bake the Pie: Brush the top crust with milk and sprinkle the sugar over the top.
  • Bake for 50-60 minutes, until the crust is golden and the filling is bubbling.
  • Let the pie cool for at least 2 hours before slicing, so the filling has time to set.
  • Serve at room temperature and enjoy.

Notes

  • Use 1 (14- to 16-ounce) package prepared pie crusts instead of homemade (there should be two crusts in the pack)
  • If the edges of the pie start to brown too much, cover them with foil.
