Breakfast doesn’t get any better than these egg casserole recipes. And this easy egg and potato casserole with chilies is one of the best!

Ingredients

  • 1 tablespoon olive oil

  • 1 small onion, thinly sliced

  • 8 ounces diced green chilies

  • 2 medium russet potatoes, washed and thinly sliced

  • 3/4 teaspoon salt, divided

  • 3/4 teaspoon ground black pepper, divided

  • 6 large eggs

  • 1/2 cup cheddar cheese, shredded

  • 3 hardboiled eggs, for serving

Instructions

  • Preheat the oven to 350 degrees Fahrenheit and lightly grease a 9-inch square casserole dish.
  • Warm the olive oil in a large skillet over medium heat. Then sauté the onions until soft (3-4 minutes).
  • Add the green chilies, potatoes, 1/2 teaspoon salt, and 1/2 teaspoon black pepper and continue to sauté for 8-10 minutes until the potatoes are starting to soften.
  • Transfer the mixture to the prepared casserole dish and spread it out evenly.
  • In a medium mixing bowl, beat the eggs with the remaining salt and pepper. Pour the egg mixture over the potatoes and sprinkle the cheddar cheese on top.
  • Bake for 35-40 minutes, or until eggs and potatoes are cooked.
