Sweet and Salty Rocky Road Fudge with Marshmallows

Rocky road has always been one of my favorite ice cream flavors. Which makes this salty, sweet, crunchy sensations one of my favorite treats.

How Long Can You Store Rocky Road Fudge?

Fudge will easily last up to two weeks in the refrigerator when placed inside an air-tight container or a Ziploc bag. If you’re using a container, just be sure to seperate the layers with wax paper or parchment to keep them from sticking together.

Or if you’re like me and you want to savor these a little bit longer, you can freeze them for up to two months.

There’s nothing better than pulling out this decadent dessert from the freezer.

My grandmother does this with homemade bread. She freezes it. Then pulls it out once a week as a special treat. Whip up a batch of this rocky road fudge, store in the freezer, and you’ll have a tasty treat to look forward to every weekend!

A fun variation…

If you want to shake things up a bit, you can put graham crackers on top and then cut the fudge into graham cracker size pieces. This gives it a great smore-like flavor and experience.

You could also crushed graham crackers (or even Teddy Grahams) and sprinkle it over the top to give it a nice crunch and a “smore” flavor.

Sometimes I also make a graham cracker crust on the bottom. Just use crushed graham crackers and melted butter. Mix together well and line the bottom of your pan.

You can also add in M&M’s, pretzel sticks, caramel, and just about anything your heart desires. Have fun with it! Or simply stick to the original recipe. You really can’t go wrong.

Ingredients

  • 2 cups 2 semisweet chocolate chips

  • 1 cup 1 chunky peanut butter

  • 4 cups 4 miniature marshmallows

Directions

  • Grease a 9 x 9 inch pan.
  • In a medium saucepan, heat the chocolate chips and peanut butter over low heat until chips are completely melted. Remove from heat.
  • Stir in marshmallows.
  • Pour melted mixture into the 9 x 9 inch pan. You can let your fudge cool on the counter or place it in the refrigerator to speed things up. You can also freeze them overnight. Makes them even easier to cut. Once cooled, cut and enjoy!
