Why You’ll Love These Pepperoni Pizza Bombs
Quick & Easy: Ready in under 20 minutes, pepperoni pizza bites are an ideal quick appetizer. They also make an excellent after-school treat. Your Littles will love them!
Customizable: This versatile recipe can be customized with your favorite pizza toppings and variations. Add finely diced veggies, different cheeses, or other meats.
Cheesy & Gooey: The crispy, golden-brown exterior holds a delightfully gooey, cheesy center. Every bite has the same stretchy mozzarella goodness as a slice of pizza.
Ingredients
- Buttermilk Biscuits: The time-saving secret ingredient! They form a perfect pillowy exterior and save you the trouble of making dough from scratch. I like Pillsbury, but you can use whatever brand you prefer.
- Pizza Sauce: The classic tomato-based sauce brings authentic pizza flavor. It also keeps the filling moist and delicious.
- Pepperoni Slices: For that unmistakable pizza parlor taste. You can substitute mini pepperoni slices if you want.
- Mozzarella Cheese: It melts perfectly for irresistible cheese pulls inside each bomb. It gives you the gooey center that makes pizza so terrific.
- Parmesan Cheese: It adds a sharp, salty kick and creates a beautiful crusty exterior.
- Garlic Butter: For a rich, savory flavor and golden sheen. You need melted butter, minced garlic, and Italian seasoning. It’s herby, earthy, and delightfully aromatic.

How to Make Pepperoni Pizza Bombs
You can quickly prepare these pepperoni pizza bombs in fewer than 10 steps.
1. Prepare. Preheat the oven to 375 degrees, and line and spray a baking dish with parchment paper and cooking spray.
2. Flatten the biscuits. Flatten them into 3-inch circles with a rolling pin.
3. Fill and seal. Spread a teaspoon of sauce on each circle. Leave a 1/4-inch border, then add the pepperoni and mozzarella. Fold the edges of the dough carefully and pinch to seal.
4. Set aside. Transfer the balls to the baking sheet, seam-side-down. Cover with greased plastic wrap and set aside for 30 minutes. Whisk together the garlic butter ingredients.
5. Bake. Remove the plastic wrap. Brush the balls with the garlic butter and bake for 15 to 18 minutes. When ready, remove from the oven and brush them again with garlic butter. Sprinkle Parmesan on top.
6. Serve. Serve the pepperoni pizza bombs with pizza sauce on the side. Enjoy!

Tips for the Best Pepperoni Pizza Bombs
Despite this recipe being so simple, I have several tips that’ll make it even easier.
- Room temperature is key. These bombs don’t require a lot of time in the oven. So, bringing the cheese to room temperature before use will ensure proper melting during the short baking time.
- Don't skip the spraying! Spraying your hands with nonstick cooking spray will prevent sticking when handling the dough. If using a rolling pin, spray it, as well.
- Get 'em nice and tight. When sealing the bombs, pinch the edges firmly. Then, double-seal by folding the seams inward. This should prevent the cheese from leaking during baking.
- Don’t overfill! Use approximately 1 teaspoon of sauce, 2 -3 pepperoni slices, and 2 mozzarella cubes per bomb. If that seems like too much, add less of something. If you stuff them too full, the bombs will rupture while baking.
- Remember to rotate. Even though the baking time is short, the bombs will still benefit from rotating. Just a quick rotation about halfway through the baking time will be fine.
- Make them your own. You can easily tweak this recipe to suit your tastes. However, for the best texture, avoid using ingredients with excessive moisture or grease. Don't use super soft cheeses or greasy meats.
