This is another cauliflower dish that is far from bland! These cauliflower florets are seasoned and roasted until they get nice and crispy and tender. 

The finishing touches are lime juice, cilantro, and red onion. If you want to add a bit of creaminess, serve it with some avocado, too!

This salad has layers and layers of delicious flavor. It starts with a bed of peppery arugula.

Then, protein-packed lentils and veggies are tossed in. The squash is one of my favorite parts of this salad. 

The tahini dressing is creamy and flavorful. Drizzle it over the whole salad for a beautiful marriage of delicious ingredients. 

This salad is a delicious and filling lunch and is easy to prep the ingredients ahead of time!

8. Vegan Tofu Poke Bowl 

Vegan poke bowls are a super fun lunch or dinner recipe that’s full of flavor! 

Top the fluffy rice with ginger marinated tofu. It has a fantastic flavor that really makes this dish special. 

The pickled onion is nice and bright. The avocado is creamy and the cucumber is refreshing and crunchy. 

I also love the edamame in this poke bowl. It’s an extra layer of protein that gives the bowl a nice texture. 

9. Almond Butter Sesame Zucchini Noodles 

These almond butter zucchini noodles are a healthy and delicious take on sesame peanut noodles. 

The almond butter sauce has chopped almonds and scallions and it’s slightly sweetened using dates.
