Keebler Club Cracker Bars

Club cracker bars are named after the crackers they were originally made with.

Of course, you can use other types of crackers and get the same delicious results.

That said, the point is to use salty, buttery crackers to create a nice contrast with the sweet filling and topping.

That’s what these bars are known for: the perfect combination of sweet chocolate and sweet-salty caramel.

The textures are also what makes them such a huge success.

Between the crunchy and crispy crackers and ooey-gooey caramel, they’re out-of-this-world amazing.

Oh, and did I mention this is a no-bake dessert? It’s the treat that keeps on giving! 

All it takes here is to cook the filling on the stove, melt the chocolate topping, and voila, you’re ready to assemble. The fridge takes care of the rest.

So this recipe is ideal for making during the summer when it’s way too hot to turn on the oven.

How to Make Keebler Bars

Besides how wildly delicious these are, the best thing about this dessert is that it’s no-bake.

So, once the filling is cooked, you’re ready to assemble.

1. Prepare the pan.

This dessert is very sticky, so if you want clean-up to be a breeze, line the pan with wax or parchment paper.

Not only will it leave the pan relatively clean, but it’ll also allow you to lift out the dessert once you’re ready to slice.

Grease the lining with butter or non-stick spray. That’ll make it easy to remove the bars from the lining.

2. Layer the crackers in the pan.

Arrange them in a single layer on the bottom of the pan. 

It’s best to do this step now rather than later. This way, you can simply pour the caramel into the pan once it’s cooked.

3. Cook the caramel.

Combine the granulated sugar, brown sugar, crushed Graham Crackers, milk, and butter in a saucepan over medium heat.

Once well-mixed, reduce the heat to low and bring the mixture to a boil. Stir constantly to keep the bottom from scorching.

4. Assemble the next layers.

Pour the caramel over the crackers. Then, top the caramel with another layer of crackers.

5. Prepare the topping.

Place the peanut butter, chocolate chips, and butterscotch chips in a large, microwave-safe bowl. 

Microwave the mixture at medium power in 30-second increments until smooth and melted. 

Pour the topping over the 2nd layer of crackers and spread it evenly.

6. Refrigerate to set.

Place the pan in the fridge and let the dessert set for about 2-4 hours. 

7. Slice, serve, and enjoy!

Tips for the Best Keebler Bars

  • Whole Graham Crackers work just as well as crumbs. Just give them a quick blitz in the food processor, and it’ll crush them to a fine powder.
  • Use a heavy-bottom, non-stick saucepan when preparing the caramel to keep it from burning. If you use something lightweight, the sugar will catch, and the whole thing will be ruined.
  • Use salted butter to contrast the sweetness of the sugar. Or, add a sprinkle of salt to the caramel filling as it cooks.

Keebler Bar Variations

  • Swap out chocolate chips for semi-sweet or milk, depending on how sweet you want the bars to be. You can also swirl in a bit of melted white chocolate to create a pretty marbled topping.
  • You don’t have to use Club crackers. Any buttery saltine crackers will do!
  • Add crushed nuts on top or in one of the layers for a nice, crunchy surprise. You can also try M&M’s, toffee chips, and crushed pretzels.

How to Store Keebler Bars

Store Keebler bars in an airtight container. 

If your climate is cold enough, you can keep the bars at room temperature for 3-5 days

But, if it’s warm in your house, it’s better to refrigerate them to keep the chocolate and caramel from melting.

The bars will keep well for up to 2 weeks in the fridge.

To keep the bars around longer, pop them in the freezer. Double wrap them in plastic and foil and place them in freezer-safe bags.

Label the bags accordingly and then freeze. You can store the bars in the freezer for up to 2 months.

Thaw frozen Keebler bars at room temperature for several minutes before serving.

Ingredients

  • 1 box Club crackers (about 90 crackers)

  • 2/3 cup granulated sugar

  • 1/2 cup brown sugar

  • 1 cup crushed Graham Crackers

  • 1/4 cup milk

  • 1/2 cup salted butter or margarine

  • 2/3 cup peanut butter

  • 1/2 cup chocolate chips

  • 1/2 cup butterscotch chips

Instructions

  • Line a 9×13-inch pan with parchment paper and lightly grease it with butter or margarine. Arrange crackers in a single layer on the bottom of the pan.
  • In a saucepan over medium heat, combine the sugars, Graham Crackers, milk, and butter. Reduce the heat to low and boil for 5 minutes, stirring constantly.
  • Pour the mixture over the crackers. Add another single layer of crackers on top.
  • In a microwave-safe bowl, add the peanut butter, chocolate chips, and butterscotch chips. Microwave at medium power in 30-second increments until melted and combined.
  • Pour the peanut butter mixture over the 2nd layer of crackers and spread evenly. Refrigerate for 2-4 hours or until it sets. Slice into bars, serve, and enjoy!
