  • 1/4 teaspoon sea salt

  • 1 20 ounce can un-ripe jackfruit, drained

  • 1/2 cup water

  • Quick Slaw
  • 2 cups shredded cabbage

  • 1/4 cup chopped cilantro

  • 1/2 tablespoon lime juice

  • 1/2 teaspoon olive oil

  • sea salt and freshly ground pepper to taste

  • For Serving
  • 8 slider buns

  • desired toppings: pickles, mustard, serrano peppers, etc.

  • For the BBQ sauce, place adobo sauce, chipotle peppers, vinegar, ketchup, mustard, garlic, vinegar, cumin, paprika, and back pepper in a food processor. Pulse until smooth, and set aside.
  • Shred pieces of jackfruit to resemble pulled pork. Then, heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced onion and cook until translucent. Next, add the jackfruit and cook for 5 minutes.
  • Stir in half of the BBQ sauce mixture, and reduce the heat to low. Cover the skillet, and simmer for 20 minutes. Remove the lid and stir halfway through.
  • For the slaw, combine cilantro, lime juice, olive oil, cabbage, and salt and pepper in a medium bowl. Stir to combine.
  • Build sandwiches on slider buns, and top with coleslaw, remaining BBQ sauce, and your favorite fixings. Serve, and enjoy!

  • Consider adding a touch of sweetness to the BBQ sauce with brown sugar or honey.
  • Toast the slider buns on a pan or grill to add a nice texture and prevent them from getting soggy from the sauce.
