This creamy, spicy Instant Pot chicken curry is perfect for busy weeknights or a comforting meal.

Ingredients

  • 2 teaspoons 2 coconut oil

  • 1 cup 1 diced yellow onions

  • 3 cloves 3 garlic, minced

  • 2 tablespoons 2 fresh ginger, grated

  • 1 tablespoon 1 yellow curry powder

  • 1 cup 1 bell peppers

  • 1 pound 1 boneless chicken thighs, cut into 1-1.5 inch pieces

  • 1 cup 1 tomato puree

  • 1/4 cup water

  • 1 cup 1 full-fat, unsweetened coconut milk

  • 1 teaspoon 1 garam masala

  • Salt, to taste

  • Cilantro and green onion, for garnish

Instructions

  • Turn the Instant Pot to ‘Sauté’ mode and heat up the coconut oil. Add the onions and sauté until translucent. Add the garlic, ginger, and curry powder and sauté for another 1-2 minutes until fragrant.
  • Mix in the bell peppers, chicken, tomato puree, and water.
  • Secure the lid and set the valve to ‘Sealing’. Cook on ‘High Pressure’ for 4 minutes.
  • Once complete, allow the pressure to release naturally for 5 minutes, then quick release any remaining pressure.
  • Open the lid, stir in the coconut milk, garam masala, and salt, and simmer for an additional 2-3 minutes on the ‘Sauté’ function.
  • Garnish with freshly chopped cilantro and green onion.
  • Serve with rice, naan, or your preferred side, and enjoy!

  • Add a splash of lime juice before serving to enhance the flavors with a touch of acidity.
