Tips For the Best Funfetti Cake Mix Cookies

Whether you’re hosting a party, celebrating a special occasion, or simply craving a delightful treat, these cake mix cookies are sure to bring smiles to everyone’s faces.

And with these tips, they’re perfect every time!

  • Be gentle. Whisk the oil and eggs by hand, then stir the cake mix gently with a spatula or wooden spoon. Also, add the chips (if using) before the dough is fully mixed to prevent overmixing.
  • Chill the dough. For thicker cookies, portion and chill the dough in the fridge for 15-30 minutes to keep them from spreading too much.
  • Underbake slightly. Take the cookies out when the edges are set, but the centers still look a bit gooey. They will finish setting as they cool.
  • Scoop consistently. Use a cookie scoop to portion out the dough, so all your cookies are the same size and bake evenly.
  • Add mix-ins. White chocolate chips are great, but you can also mix in regular chocolate chips, M&Ms, more sprinkles, chopped nuts, etc. for extra flavor and texture.
  • Decorate tops. Press a few extra white chips or sprinkles onto the tops of the dough balls before baking for a pretty presentation. You can also roll them in sugar for a nice crunch.
  • Adjust the bake time. Ovens vary, so keep an eye on your first batch and adjust the bake time if needed. Bake them on the center rack, too!

To Freeze the Dough: Make and portion the dough, then freeze it on a tray until solid. Transfer to an airtight freezer bag for up to 3 months and bake from frozen (plus 2-3 minutes extra).

To Freeze Baked Cookies: Let the cookies cool completely, then freeze in a single layer on a baking sheet. When solid, transfer to an airtight freezer container or bag for up to 3 months. Thaw in the fridge overnight.

These 3-ingredient funfetti cake mix cookies are incredibly easy to make and turn out soft, chewy, and packed with colorful sprinkles in every bite.

Ingredients

  • 1/2 cup vegetable oil

  • 2 large eggs

  • 1 (15.25 ounce) box Funfetti cake mix

  • 1/2 cup white chocolate chips, optional

Instructions

  • Preheat the oven to 350 degrees Fahrenheit (175°C) and line two baking sheets with parchment paper. Set aside.
  • In a large bowl, whisk the oil and eggs until well blended. Add the cake mix and chocolate chips (if using) and mix gently with a spatula until just combined.
  • Portion the dough with a mini cookie scoop or tablespoon and roll into balls. Place on the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, until the edges are set and lightly golden. The centers may look slightly underbaked – that’s normal.
  • Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy!

Notes

  • Do not overmix the dough once you add the cake mix. Mix just until combined to avoid tough cookies.
  • For extra vanilla flavor, add 1-2 teaspoons of a high-quality pure vanilla extract.
  • Bake until the edges are set but the centers look slightly underbaked for perfectly soft and chewy cookies.

  1. I made them but they didn’t spread out. They look just how I scooped them. I followed the directions as written except the optional chips.

    • Hi Norma!
Sorry to hear these didn’t work out for you.

Did you chill the dough? Because that will discourage spreading.

That said, these cookies aren’t supposed to spread that much, but if you like, you can press them lightly with the bottom of a glass before baking.

It could also be the oven temp wasn’t high enough.
I have an oven thermometer to ensure it’s running right (my old one was consistently 10-20°F cooler than it said on the dial).
If possible, I recommend grabbing one to ensure your oven gets hot enough.

      Hope this helps 🙂
