Ingredients

  • 4 cups broccoli florets, cut into small bite-sized pieces

  • 1/2 medium yellow onion, diced

  • 1 cup matchstick carrots

  • 4 cups chicken or vegetable stock

  • 1 teaspoon kosher salt

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon paprika

  • 1/8 teaspoon nutmeg

  • 1 teaspoon Dijon mustard

  • 1 1/2 teaspoons hot sauce

  • 3 tablespoons unsalted butter

  • 1/4 cup all-purpose flour

  • 1 cup half and half

  • 2 cups shredded cheddar cheese

Instructions

  • In a large slow cooker, combine broccoli, onion, carrots, chicken stock, salt, pepper, paprika, nutmeg, mustard, and hot sauce. Cook on low for 4 hours until the vegetables are tender.
  • Melt butter in a saucepan over medium heat. Slowly whisk in flour until smooth and thick. Gradually mix in the half and half until the mixture is creamy. Add the cheese a little at a time, stirring until the cheese is melted and the sauce is smooth.
