It’s a refreshing, well-balanced dish you can enjoy on its own. But it also pairs well in sandwiches, wraps, or atop salad greens. 

This recipe is always my go-to when packing lunch or preparing for picnics. It’s an easy, delicious way to make lunchtime extra delicious.

Ingredients

  • Chicken – The primary source of protein in the salad. You can grill, roast, or boil the chicken. Then cool and chop it into bite-sized pieces.
  • Mayonnaise – Adds creaminess to the salad and serves as the base of the dressing. You can adjust the quantity based on your preference for creaminess.
  • Green Onions – For a bit of crunch. They also add a mild onion flavor and sharpness that balances the salad.

How to Make Cranberry Chicken Salad

1. Prepare your ingredients. 

  • Ensure your chicken is cooked and cooled, then chop it into bite-sized pieces. 
  • Also, chop your green onions and pecans.

2. Mix chicken and mayo. 

  • In a bowl, combine the chopped chicken and mayonnaise. Stir until the chicken is evenly coated.

3. Combine everything. 

  • Add green onions, dried cranberries, apples, pecans, lime juice, dill weed, salt, and pepper. Stir until all the ingredients are well-distributed.

How to Store

This is the best way to store your cranberry chicken salad: 

  • Store the chicken salad in an airtight container in the fridge.
    • Plastic containers with tight-sealing lids work great, as do glass containers. It’ll prevent your salad from drying out.
    • A gallon-sized, zip-top plastic bag will do in a pinch. 
  • Chicken salad can only sit at room temperature for 2 hours. Any more, and you risk bacteria that cause food poisoning. Promptly refrigerate it to preserve its freshness. 

Consume your stored cranberry chicken salad within 3 days for the best quality. The fresh ingredients will not last much longer, even when stored properly.

I do NOT recommend freezing this salad. Mayonnaise doesn’t hold up well in the freezer. And the salad texture could become unappetizing once thawed.

Ingredients

  • 2 cooked chicken breast halves, chopped

  • 1/2 cup mayonnaise, or to taste

  • 2 green onions, chopped

  • 1/2 cup sweetened dried cranberries

  • 1/2 cup chopped pecans

  • 1 tablespoon lime juice

  • 1/4 teaspoon dried dill weed

  • 1 pinch salt and black pepper, or to taste

Instructions
