Jazz up your holiday table with these Christmas roast recipes! From beef tenderloin to this stunning beef Wellington, each of these meals is guaranteed to please.

Ingredients

  • For the Mushroom Duxelles
  • 1 -2 pounds mushrooms, such as portabella, cremini, white button, cleaned, trimmed, and roughly chopped

  • 4 garlic cloves, minced

  • 2 tsp fresh thyme leaves

  • 1 teaspoon salt

  • 1 teaspoon fresh ground black pepper

  • For the Caramelized Onions and Garlic
  • 1 large onion, diced

  • 1 garlic clove, minced

  • 1 tbsp extra-virgin olive oil

  • 1/2 teaspoon salt

  • 1/2 teaspoon fresh ground black pepper

  • For the Beef
  • 2 pounds beef tenderloin, trimmed of fat and lining

  • 1 tablespoon salt

  • 2 teaspoons fresh ground black pepper

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon horseradish

  • 2 tablespoons Dijon mustard

  • 1/2 pound prosciutto ham, about 16 slices

  • 2 frozen puff pastry sheets, thawed

  • flour for dusting

  • 1 egg

  • 1 teaspoon milk

  • sea salt, for topping

  • 1 recipe rosemary roasted potatoes, for serving

Instructions

  • Clean, trim, and roughly chop the mushrooms. Place them into a food processor with the garlic and thyme and pulse until it’s spreadable.
  • In a skillet over medium heat, cook the mushroom mix with salt and pepper for about 10 minutes. The mushrooms should be dry when they’re done.
  • Remove from the heat, transfer to a plate, and let cool completely.
  • While the mushrooms cool, make the onions.
  • In the same skillet used for the mushrooms, add the onions and olive oil. Sauté on medium-low heat until soft, then add the salt and pepper.
  • Cook, stirring occasionally, until soft and the pan is dry. Transfer the onions to a plate and leave to cool fully.
  • Lay a few pieces of plastic wrap on the counter, long enough to wrap the beef on all sides.
  • In the middle, lay the prosciutto vertically, slightly overlapping, to the length of the beef.
  • Spread the cold mushroom and onions over the ham in an even layer.
  • Place the beef in the middle and gently lift the plastic on one side to cover the meat in the ham. Peel back the plastic, then lift the other side to cover it entirely. Gently wrap the ham around the ends.
  • Roll the beef over in the plastic, seal the ends, and place it in the fridge for 15-30 minutes.
  • Lightly beat the egg and milk in a small bowl and set aside.
  • Lay new plastic on the counter, then add the puff pastry sheets side by side. Overlap them slightly and seal them with a small amount of egg wash.
  • Roll until they’re wide enough to cover the beef fully.
  • Take the beef out of the fridge, remove the plastic, and place it in the center of the pastry.
  • Brush egg wash around the edges of the pastry, then roll it up around the beef, wrapping it tightly. Trim off excess pastry on the ends and pinch to seal shut.
  • Put the pastry-wrapped beef into the fridge for 10-15 minutes.
  • Preheat the oven to 425°F and line a baking sheet with foil. Add a light coating of cooking spray.
  • Remove the beef wellington from the fridge and place it on the tray, seam side down.
  • Brush the top and sides with egg wash and use the back of a fork to make a pattern (optional), being careful not to cut through the pastry.
  • Sprinkle liberally with sea salt and bake for 25-30 minutes. Check the internal temperature before removing it from the oven. It should be 110º F for rare and 120º F for medium rare.
  • If the beef is not ready, pop it back in the oven for 5 minutes and check again. Keep in mind it will continue to cook as it rests.
  • Take the Wellington out of the oven and let it rest for 10-15 minutes.
  • Slice, serve with roasted potatoes, and enjoy.

Notes

  • Let the Beef Wellingtons rest after baking to allow the juices to redistribute before slicing.
  • Use a meat thermometer to check for doneness without having to cut into the Wellington.
