  • Frozen Fries: Let’s keep things simple with pre-cut, frozen fries! Of course, you can also use Russets (see below) or sweet potato fries!
  • Olive Oil: Helps the fries crisp up nicely in the oven.
  • Garlic Powder, Salt, and Pepper: Simple seasonings that pack a flavorful punch. Garlic powder delivers an intense garlic taste without the hassle of mincing, while salt and pepper enhance all the flavors.
  • Hot Sauce: The star ingredient that brings the signature Buffalo heat. I always use Frank’s RedHot, but you can also make your own with this Buffalo wing sauce recipe!
  • Cheddar and Blue Cheese: Freshly grated cheddar cheese melts into ooey-gooey yumminess. Blue cheese crumbles add a hit of salty goodness that pairs well with the hot sauce. 
  • Ranch Dressing: Too cool things down.

How to Make Buffalo Fries

Crispy, spicy, and impossibly satisfying, these Buffalo fries are a must-try for lovers of bold flavors!

It’s like your favorite bar snack got a delicious upgrade. But they could not be easier to make at home!

1. PREP: Preheat the oven to 450°F and line a baking sheet with parchment paper.

2. TOSS: Coat the frozen fries evenly in the oil and spices. Spread in a single layer on the prepared baking sheet.

3. ROAST: Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy.

4. BROIL: Sprinkle the cheddar cheese and blue cheese crumbles over the hot fries, then drizzle with Buffalo sauce. Broil for 2-3 minutes, until the cheese is melted.

5. SERVE: Serve immediately with ranch dressing drizzled over the top and green onions for garnish. Enjoy!

How to Use Fresh Potatoes:

You’ll need about 2-3 pounds of Russet potatoes. 

For the best, crispiest fries, here’s what to do:

  1. Cut the potatoes into 1/4-inch fries or wedges and then soak them in cold water for at least 30 minutes to remove excess starch.
  2. Place the fries in a large pot and cover with cold water. 
  3. Bring to a boil and cook for 5 minutes.
  4. Drain and pat them very dry before seasoning.
  5. Toss in the oil and spices and spread on the baking sheet.
  6. Roast for 25-30 minutes, toss/flip, and roast for another 20-25 minutes, until crispy and tender. 

Once the fries are cooked, follow the topping instructions on the recipe card.

Tips For the Best Crispy Baked Buffalo Fries

Crispy baked Buffalo fries have truly stolen my heart! 

Imagine settling into your favorite sofa, surrounded by friends, and diving into a plate of crispy, spicy goodness. Yum!

And thanks to these tips, yours will be restaurant quality every time.

  • Use high heat. Bake the fries in a hot oven to get them crispy and golden brown. Flip halfway through cooking so they’re evenly browned.
  • Give them room. Bake the fries in a single layer so they have better air flow to get crispy. You can move them into a pile when adding the cheese.
  • Butter + hot sauce. For an extra luxurious sauce, warm the wing sauce in a saucepan with 2 tablespoons of butter. Stir until smooth.
  • Toss to coat. If you want Buffalo goodness in every bite, toss the baked fries with the sauce in a bowl until evenly coated. Then, arrange them back on the tray and broil with the cheeses as instructed. 
  • Topping ideas. Take your Buffalo fries to the next level with shredded chicken, crispy bacon bits, or crispy onions.

It won’t come as a surprise to hear that these crispy loaded fries are best enjoyed right away.

Like all fries, they turn soggy the longer they sit. In fact, that’s extra true of these because of all the toppings!

With that in mind, I don’t recommend making them ahead or storing leftovers. Fresh is best!

But if you have to, here’s what to do:

To Store: Allow the fries to cool completely, then store them in an airtight container in the fridge for up to 3-4 days. Store extra sauces separately in airtight containers.

To Reheat: Preheat the oven to 400°F, spread the fries on a baking sheet, and bake for 10-15 minutes until crispy. Add fresh cheese and sauce and broil until melty.

  • 1 cup Buffalo wing sauce (such as Frank’s RedHot)

  • 1/4 cup ranch dressing

  • Sliced green onions or chives, for garnish

Instructions
