This slow cooker beef bourguignon makes it easy to have a home-cooked dinner any night of the week!

Ingredients

  • 1 tablespoon olive oil

  • 6 ounces bacon, roughly chopped

  • 3 pounds beef brisket, trimmed and cut into 2-inch chunks

  • 1 large carrot, thick slices

  • 1 large white onion, diced

  • 12 pearl onions

  • 1 pound baby potatoes (optional)

  • 6 cloves garlic, minced

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 2 cups red wine

  • 2 tablespoons all-purpose flour

  • 3 cups beef stock

  • 2 tablespoons tomato paste

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon fresh thyme, chopped

  • 2 tablespoons fresh parsley, chopped

  • 2 bay leaves

Instructions

  • Heat oil in a large skillet over medium heat. Sauté the bacon until crisp and browned. Remove from skillet and set aside.
  • Sear the beef in batches until browned on all sides in the remaining oil-bacon fat.
  • Transfer the beef and bacon to the slow cooker pot. Add the carrots, onions, potatoes, garlic, salt, and pepper.
  • In the same skillet, pour 1/4 cup of red wine and use a wooden spoon to scrape off any brown bits.
  • Add the rest of the wine, simmer for 5 minutes, then add the flour. Whisk until smooth, reduce the heat to low, and stir until thickened.
  • Pour the wine reduction into the slow cooker. Mix in the beef stock, tomato paste, Worcestershire sauce, and herbs.
  • Cook on low for 8 hours, or until the beef is fork-tender.
  • Serve and enjoy!

  • Choose a high-quality cut of beef like chuck roast, which is well-marbled and becomes tender when slow-cooked.
