Most people think fall is the perfect time to break out the acorn squash recipes.
They aren’t wrong, but you can make these delicious dishes all year long.
After all, acorn squash is one of the healthiest vegetables out there. So why wouldn’t you want to enjoy it all the time?
(Assuming your grocery store carries it, of course.)

I’ve made a list of my favorite acorn squash recipes. Now, you can enjoy it to the fullest, no matter what season it is!
1. Roasted Acorn Squash
Roasted acorn squash tastes great by itself. You don’t have to stuff it with other ingredients or cook it with pumpkin or chicken.
Just add a little butter, syrup, cinnamon, salt, and cloves. Then, roast them in the oven for about 45 minutes.

There’s the acorn squash, of course. You also add cauliflower, carrots, celery, sweet potatoes, and more.
The seasoning mixture is another thing that makes it so good.
It combines garlic, ginger, sage, and cinnamon.
It gives the whole thing a rich, complex taste that everyone should enjoy.
Add your croutons, cheese, and other toppings to suit your tastes.
3. Sausage-Stuffed Acorn Squash
Forget stuffed peppers. Sausage-stuffed acorn squash is here to blow peppers out of the water.
(No offense, stuffed peppers. I love you, too.)
This cheesy, sweet, and savory meal is so good. It’s stick-to-your-ribs comfort food to warm your heart and belly.
It’d be perfect as a Thanksgiving lunch option.
4. Wild Rice Stuffed Acorn Squash
Need a vegetarian stuffed acorn squash recipe? This one will work well.
It’s delightfully herby, and the soft, fluffy rice feels as good as it tastes.
They take a little over an hour to make, but they’ll impress anyone who tries them.
Additionally, the sage, cranberries, and walnuts make them utterly festive for the holidays.

This recipe is similar to the one above. It simply swaps out the rice for quinoa.
