Warm yourself up with this incredible vegan coconut curry soup. It’s too good to be true!

Ingredients

  • 2 tablespoons olive oil

  • 2 shallots, chopped

  • 4 garlic cloves, roughly chopped

  • 2 teaspoons chopped fresh ginger

  • 1 medium jalapeño pepper, sliced, seeds okay

  • 1/4 cup chopped lemongrass

  • 4 cups vegetable broth

  • 1/2 teaspoon salt

  • 4 kaffir lime leaves (optional)

  • 1 pound broccoli florets, chopped

  • 2 cups baby spinach leaves

  • 1 cup cilantro leaves

  • 1 cup coconut milk

  • 1 teaspoon sugar (or alternative sweetener)

  • 3 tablespoons fresh lime juice

  • 1 teaspoon vegan fish sauce

Instructions

  • Heat olive oil in a heavy-bottomed pot over medium heat. Sauté shallots for about 3 minutes until they become translucent.
  • Add the garlic, ginger, and jalapeño, and sauté for another 3 minutes until fragrant.
  • Stir in the lemongrass and sauté for 1-2 more minutes.
  • Add the vegetable broth, salt, kaffir (if using), and broccoli. Bring the mixture to a boil. Cover, reduce heat, and simmer for 10-12 minutes until the broccoli is fork-tender.
  • Turn off the heat and remove the kaffir lime leaves (if using).
  • Add baby spinach and cilantro to the pot. Blend the soup with an immersion blender until smooth.
  • Place the blended soup back on low heat. Stir in the coconut milk, sugar, lime juice, and fish sauce.
  • Divide soup among serving bowls.
  • Serve and enjoy!

  • Garnish Ideas: roasted broccoli, crispy shallots, toasted coconut, croutons, lime wedges
  • You can slice tough or large broccoli stems thinly to help them cook faster.
