Gather ’round for the Christmas morning strata casserole, where cheesy goodness meets spinach in a holiday hug. It’s the perfect dish to make your festive morning merry and bright.

Ingredients

  • 2 tablespoons olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 3 cups fresh spinach, roughly chopped

  • 1 cup cherry tomatoes, halved

  • 6 cups cubed day-old bread

  • 1 1/2 cups shredded cheddar cheese

  • 6 large eggs

  • 2 cups whole milk

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon nutmeg

  • 1/2 cup grated Parmesan cheese

Instructions

  • Grease a large cast-iron skillet or baking dish.
  • Heat olive oil in a pan over medium heat. Sauté the onion until translucent, then add the garlic and cook for another minute.
  • Add the spinach and stir until wilted. Add in the tomatoes and cook for an additional 2 minutes. Remove from heat.
  • In the prepared skillet, layer half the bread cubes, half the spinach mixture, and half the cheese. Repeat with the remaining bread, spinach, and cheese.
  • In a large bowl, whisk together eggs, milk, mustard, salt, pepper, and nutmeg. Pour mixture evenly over the bread and spinach layers.
  • Let the strata sit for at least 30 minutes or refrigerate overnight.
  • Preheat the oven to 375 degrees Fahrenheit.
  • Sprinkle the top with grated Parmesan cheese. Bake for 40-45 minutes, or until the strata is puffed up, golden brown, and set in the center.
  • Let cool for 10 minutes before slicing.
  • Serve and enjoy!

Notes

  • Choose crusty, dense bread like French or sourdough to hold up against the egg mixture without getting soggy.
  • For added flavor, mix in herbs like thyme or rosemary to the egg mixture before pouring it over the bread.
