Beef and Cheddar Sliders

These easy beef and cheddar sliders are so savory and delicious! I recently whipped up a batch for game day, and they disappeared so fast.

Seasoned beef gets topped with melty, sharp cheddar cheese and covered in a delectable sauce. It’s all nestled between soft, fluffy Hawaiian rolls.

They’re tender, juicy, and unbelievably packed with flavor. Everything about them is delicious, from the soft, fluffy buns to the earthy, herby sauce. 

Best of all, they’re effortless to make! They require 10 minutes of prep work and another 10 minutes in the oven. You can even prep them ahead of time and pop them in the oven when you’re ready to serve.

You won’t be able to resist these beefy bites of heaven!

Ingredients for Beef and Cheddar Sliders 

The ingredient list for this recipe may seem long, but it’s mostly sauces and seasonings. Let’s break it down: 

  • Sauces & brown sugar – Use a mixture of BBQ sauce, Worcestershire sauce, and Dijon mustard for the sauce. Combined with the brown sugar, they provide a sweet-n-tangy flavor that’s out of this world. 
  • Seasonings – As for seasonings, you need garlic powder, onion powder, and black pepper. They give the sliders an earthy, umami flavor that’s borderline addictive. 
  • Slider buns – You can usually find these at any grocery store or mass merchandiser. If you feel like mixing things up, use pretzel slider buns instead. 
  • Roast beef – Thinly sliced deli roast beef works best. It also tastes better than processed roast beef from a pack. 
  • Onion – I’ve listed these as optional because some people don’t like onions. But they bring the whole recipe together. The sauteed, slightly caramelized onions make all the difference.
  • Cheddar cheese – Because sliders are small, you won’t need a whole slice on each one. Cut six pieces of cheese in half and add only half to each sandwich. 
  • Butter – Brushing melted butter over the tops ensures they crisp up nicely. It also gives them a lovely golden-brown color.
  • Poppy seeds – Again, these are optional, but I love their crunch.

How to Make Beef and Cheddar Sliders 

Here are the steps for making beef and cheese sliders:

1. Prepare. If using onions, saute them beforehand so they’re ready to go. Preheat your oven to 350 degrees and grease a baking dish with butter. Parchment paper also works.

2. Make the sauce. Combine the sauce ingredients in a large bowl. (BBQ sauce, Worcestershire sauce, Dijon, brown sugar, garlic, onion powder, and pepper.)

Whisk them together until they’re well combined. 

3. Assemble the sliders. Halve the slider buns and place the bottom halves in the baking dish. Top them with the sauce, roast beef, and onions. 

Lay a slice of cheese on top, then return the top bun. Finish by brushing them with butter and adding the poppy seeds. 

4. Bake. Bake the sliders for 10 minutes to warm the beef and melt the cheese. Then, serve and enjoy!

Recipe Tips and Variations

Keep these tips in mind when making sliders: 

  • Give ’em a rest. After adding the melted butter, let the sliders sit for a few minutes. This gives the butter time to sink into the buns for more flavor. 
  • Don’t overdo it! If you add too much sauce, the sliders will become soggy. Add just enough to taste but not weigh the sandwich down. 
  • Take a shortcut. Sauteed onions set this recipe over the top for me. If you’re in a hurry, though, use onion flakes instead. Same great flavor with none of the work. 
  • Amp up the flavor. Garlic butter dials the flavor up a notch. If your grocery store doesn’t carry it, make homemade garlic butter
  • Choose your cheese. Cheddar not your thing? Substitute whatever cheese you like best. You can also use different buns and BBQ sauces.

These gooey beef and cheddar sliders are bursting with flavor! Packed with tender beef, melty cheddar cheese, and a tasty BBQ sauce, they can’t be topped!

Ingredients

  • 1 small onion, finely diced and lightly sautéed (optional)

  • 1/4 cup BBQ sauce

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon brown sugar

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon black pepper

  • 12 slider buns

  • 1 pound deli roast beef, thinly sliced

  • 6 slices cheddar cheese, cut in half to make 12 pieces

  • 2 tablespoons butter, melted

  • 1 teaspoon poppy seeds (optional)

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Prepare a baking dish or sheet with butter or parchment paper. It should be large enough to fit 12 sliders.
  • Saute the onions, if using.
  • Combine the BBQ sauce, Worcestershire sauce, Dijon mustard, brown sugar, garlic powder, onion powder, and black pepper in a large bowl. Mix until well combined.
  • Cut the slider buns in half horizontally. Place the bottom halves in the prepared baking dish.
  • Slather the bottom half of the buns with the sauce mixture. Then, top it with the slices of roast beef and the sauteed onions (if using).
  • Place the slices of cheddar cheese on top of the beef and onions. Place the tops of the slider buns over the cheese.
  • Brush the melted butter over the tops of the buns. Sprinkle them with poppy seeds, if using.
  • Bake for 10 minutes until the cheese has melted and the beef is warm.
  • Serve immediately and enjoy!

Notes

  • Don’t have slider buns? You can substitute potato buns or King’s Hawaiian Rolls instead.
  • For a tangy twist. Add horseradish sauce.
  • Add toppings. Jalapenos and pickles are both excellent options.
  • Make them ahead of time. Simply assemble the sliders and leave them in the baking dish. Refrigerate them until you’re ready to serve them. Then, bake them. You may need to add a few minutes to the baking time for chilled sliders.
