Ingredients

  • 2 tablespoons olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, peeled and diced

  • 1 (14.5-ounce) can diced tomatoes (with juice)

  • 2 (15-ounce) cans white beans (cannellini or Great Northern), drained and rinsed

  • 4 cups vegetable broth

  • 1 teaspoon dried Italian seasoning (or a mix of dried basil, oregano, and thyme)

  • 1/2 teaspoon red pepper flakes (adjust to your spice preference)

  • Salt and pepper, to taste

  • 4 cups fresh spinach leaves

  • 1/2 cup heavy cream

  • Grated Parmesan cheese (optional, for garnish)

  • Fresh basil or parsley, chopped (optional, for garnish)

Instructions

  • Heat olive oil in a large pot over medium heat. Saute the onion for about 3-4 minutes, or until translucent. Add garlic and carrots. Continue to sauté for 3-4 minutes, or until the carrots soften.
  • Stir in diced tomatoes (with juice) and drained white beans. Cook for 2-3 minutes to blend the flavors.
  • Add the vegetable broth and Italian seasoning, red pepper flakes, salt, and pepper. Stir well and bring the mixture to a boil.
  • Reduce the heat to low, cover the pot, and simmer for about 15-20 minutes.
  • Stir in the spinach and cook for an additional 2-3 minutes, or until the spinach wilts.
