Ingredients

  • Olive oil – Olive oil has a wide range of vitamins and minerals including Vitamin A and E, both great for boosting your immune system. Furthermore, it adds texture to the soup that you simply won’t find anywhere else. And finally, olive oil has a savory flavor with subtle hints of sweetness which bring out the best in veggie noodle soup.
  • Garlic and onion – These two flavorful ingredients bring out the sweetness of the vegetables like carrots and celery. But they also add a bit of umami that complements the palate and leaves a lasting impression. Plus, their aromas alone can instantly make your mouth water in anticipation!
  • Vegetables – Celery and carrots provide powerful vitamins A and C to help keep your immune system running strong. They also have fiber, which gives your body important antioxidants. And their crunchy texture adds an extra layer of flavor to every bite.

  • Chicken broth – Chicken broth lends its savory flavor to vegetable noodle soup and elevates your bowl of steaming goodness to new heights. With every spoonful, you notice the richness of chicken broth even when other ingredients take a backseat. Plus, with quality chicken broth in the mix, you won’t have to worry about adding too much salt since the flavors are naturally balanced.
  • Lemon –  If you want to add a burst of flavor to your vegetable noodle soup, lemon is the perfect ingredient to get the job done! It has the right balance between tart and sweet. And adding just a few slices of lemon can completely transform a bowl of plain veggie soup into something special.

Step 1: Prep the veggies

Ready to get your veggies on? Heat up some olive oil in a medium saucepan.

Then, add all of the required vegetables plus garlic and onion, season with some salt.

Step 2: Add the pasta

Pour in the pasta, and let it ‘dance’ around your pan.

Cook it until it’s slightly toasty and golden, a color that could make any foodie swoon!

It’ll take about 2 minutes for you to get there, but trust me, it’s worth the wait!

And don’t forget to give it an occasional stir so nothing sticks or gets burned.

Step 3: Add chicken broth

Add the chicken broth to the mix, and broil it on high until the pasta is cooked through but still has a bit of bite, usually around 8 minutes.

Be sure to stir occasionally so that the noodles don’t stick together.

Step 4: Season and garnish

Stir in your favorite herbs, such as parsley, dill, oregano, or basil, and a splash of lemon juice to give the soup some zing.

If it lacks flavor, season it with more freshly ground pepper and a pinch of salt.

  • You can use almost any type of noodle for this soup, so get creative and pick something you love. Traditional egg noodles are always a good choice, but if you want to go healthier (or gluten-free), try using rice or quinoa noodles. Just break them into tiny pieces.
  • Homemade chicken stock always has a fresher and better taste in my opinion. But if you don’t have the time to make your own, store-bought works just as well.
  • Add a dollop of sour cream or a sprinkle of Parmesan before serving to take the soup to a whole new level.
  • If you want a thicker soup, consider adding starchy vegetables like potatoes.
  • Use fresh herbs for a bright, fresh flavor. Parsley, basil, oregano, cilantro, and thyme are all great additions.
  • If you’re using canned vegetables, be sure to rinse them before adding them to the soup. This will help get rid of any extra salt that may have been added.
  • To give the soup a smoky flavor, try adding a splash of liquid smoke or smoked paprika.

How to Store and Reheat

You can easily store this soup in the fridge.

But bear in mind that it will thicken a lot because the pasta will absorb a lot of the liquid.

Put it in an air-tight container, and wait for it to chill before putting it in the fridge.

To reheat your leftovers, transfer the remaining soup into a pot.

Slowly start increasing the heat notch by notch while continuously stirring.

Add a couple of tablespoons of water to improve the consistency and serve when heated.

When it comes to freezing, I don’t recommend doing it because the pasta will become unpleasantly mushy during thawing.

This vegetable noodle soup recipe is bound to be a hit! Loaded with garlic, onion, celery, carrots, and noodles, you won’t be able to get enough of it!

Ingredients

  • 2 tablespoons extra-virgin olive oil

  • 1 cup sliced celery

  • 1 medium carrot, sliced (about 3/4 cup)

  • 1 clove garlic, smashed

  • 1/4 medium onion, about 1/2 cup

  • 1/4 teaspoon kosher salt

  • 1/3 cup orzo, small pasta, or broken-up noodles

  • 4 cups low-sodium chicken broth

  • 2 tablespoons fresh parsley leaves, basil, or dill, chopped

  • 1/2 lemon, juiced

  • Freshly ground black pepper

Instructions

  • Grab a medium-sized saucepan and heat the olive oil over medium heat.
  • Once the oil is hot, add the garlic, onions, and remaining vegetables.
  • Season it generously with salt and cook it for another 6 minutes.
  • Stir in the pasta and cook it until it gets that lovely golden color, about 2 minutes.
  • Add chicken broth, raise the temperature to high, and wait for it to boil. Cook it for about 8 minutes, until the pasta is tender.
  • Add the herbs and lemon juice to the mix. Add more salt and pepper if needed, according to your preferences.
