  1. I had a leftover sweet potato and found this site. Made the cheesy sweet potato cakes. I only had one sweet potato, no bacon and fresh mozzarella. My husband wanted somethin different so we improvised and these were very good. Looking forward to making this again with all of the ingredients! I am going to try more of the other variations on this site!
