I have oodles of Malabar Spinach and was unsure how to cook it and what it would taste like as it is slimy to eat raw so I was not really looking forward to trying it cooked, but I didn’t want to waste it. Anyway I tried your fried spinach with ginger, oil and salt. But I added Onion and it was really edible. So I made some more and added a whole jalapeño chilli. It was really good too.
