If you’re craving something salty, make these scrumptious tomato and caper pinwheels.

Ingredients

  • 1 (8-ounce) package cream cheese, softened

  • 1/4 cup sun-dried tomatoes in oil, drained and chopped

  • 1/3 cup sliced black olives

  • 3 tablespoons capers, drained

  • 1/2 cup shredded parmesan cheese

  • 1 teaspoon dried Italian seasoning

  • salt and pepper to taste

  • 4 large flour tortillas

  • 1 cup fresh spinach leaves, finely chopped

  • 1/4 cup sliced cherry tomatoes

Instructions

  • Combine the cream cheese, sun-dried tomatoes, olives, capers, parmesan cheese, Italian seasoning, salt, and pepper in a medium bowl. Stir briskly until well combined.
  • Spread the tortillas on a flat surface. Cover them evenly in the cream cheese mixture. Leave a small, uncovered border around the edges.
  • Evenly sprinkle the spinach and cherry tomatoes over the cream cheese layer.
  • Tightly roll up each tortilla. Wrap the rolled tortillas in plastic wrap and refrigerate them for 1 hour or longer. Doing so helps them firm up, making them easier to cut later.  
  • Remove the chilled tortillas from the fridge. Remove and discard the plastic wrap. Slice the tortillas into 1-inch pinwheels and arrange the pinwheels on a serving platter.
  • Serve immediately or wrap in plastic wrap and refrigerate until it’s time to serve. Enjoy!
