  • Chill a medium mixing bowl and the beaters from a hand mixer or whisk attachment from a stand mixer in the freezer for 10-15 minutes. Keeping everything cold helps the cream whip up better.
  • Add the cold heavy cream, Baileys, and confectioners’ sugar to the chilled bowl.
  • Using a hand mixer or stand mixer fitted with the whisk attachment, beat the mixture on medium speed. As it thickens, slowly increase the speed to high.
  • Continue beating until the cream reaches soft peaks, about 3-4 minutes total. Be careful not to overbeat, or the whipped cream can become grainy. The alcohol in the Baileys can make it a little harder to reach stiff peaks.
  • Taste the whipped cream and add a bit more Baileys or sugar if desired.
