My absolute favorite, though, is this spinach salad with hot bacon dressing. I’ll be honest with you, there’s some bias here.

Because, well, bacon. Need I explain further?

To make the bacon dressing, saute onion in bacon grease. Add brown sugar, vinegar, salt, mustard, celery seed, and pepper. Pour a mixture of cornstarch and water and mix until thick. 

Pour that beautiful dressing over some spinach, mix, and top with bacon bits. Fantastic.
