2. DRAIN the pineapple, reserving 1/4 cup of juice. Mix the fruit, sugar, and cornstarch in a large bowl. Add the juice, stir well, and pour into the dish.

3. WHISK the flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.

4. CUT in the butter with fingers or a pastry cutter until the mixture resembles coarse crumbs.

5. ADD the buttermilk and mix gently with a spatula until just combined. The mixture should be sticky but thick.

6. SPOON the topping over the fruit, leaving some gaps.

7. BRUSH the topping with melted butter and bake for 40-50 minutes, until golden brown and bubbling around the edges.

  • Sweeten to taste. Adjust the sugar to balance the flavors. Use less sugar if your pineapple is very sweet. Add more if it is slightly tart.

Note: I don't recommend freezing this dish. It won't have the same texture after thawing.

  • 1/2 cup cold buttermilk

  • 3 tablespoons melted butter

Instructions
