This creamy, spicy Instant Pot chicken curry is perfect for busy weeknights or a comforting meal.

Ingredients

  • 2 teaspoons coconut oil

  • 1 cup diced yellow onions

  • 3 cloves garlic, minced

  • 2 tablespoons fresh ginger, grated

  • 1 tablespoon yellow curry powder

  • 1 cup bell peppers

  • 1 pound boneless chicken thighs, cut into 1-1.5 inch pieces

  • 1 cup tomato puree

  • 1/4 cup water

  • 1 cup full-fat, unsweetened coconut milk

  • 1 teaspoon garam masala

  • Salt, to taste

  • Cilantro and green onion, for garnish

Instructions

  • Turn the Instant Pot to ‘Sauté’ mode and heat up the coconut oil. Add the onions and sauté until translucent. Add the garlic, ginger, and curry powder and sauté for another 1-2 minutes until fragrant.
  • Mix in the bell peppers, chicken, tomato puree, and water.
  • Secure the lid and set the valve to ‘Sealing’. Cook on ‘High Pressure’ for 4 minutes.
  • Once complete, allow the pressure to release naturally for 5 minutes, then quick release any remaining pressure.
  • Open the lid, stir in the coconut milk, garam masala, and salt, and simmer for an additional 2-3 minutes on the ‘Sauté’ function.
  • Garnish with freshly chopped cilantro and green onion.
  • Serve with rice, naan, or your preferred side, and enjoy!
