2. The baking powder is still potent if the pancake looks light and fluffy.

3. If your pancakes are flat, add 1/8 teaspoon of baking soda and 2 teaspoons of baking powder for every cup of pancake mix. 

4. Stir, and try again!

How To Store Pancake Mix 

The key to storing pancake mix for years is to ensure it stays cool and dry. 

Once you open your container of pancake mix, be sure that you seal it up tightly. Use a clip to ensure no air or moisture can penetrate the package. 

You can also store it in an air-tight container, but hold onto those cooking directions on the back of the box!

I like to place my pancake mix in a container with a lid. Then, I cut out the directions from the box, and tape it to the container. 

Can You Freeze Pancake Mix?

One of the best ways to ensure that your box of pancake mix lasts for years is by placing it in the freezer. 

Freezing pancake mix is a great way to ensure that the baking soda and powder don’t lose potency. Also, no moisture can penetrate the packaging. 

Storing it in a cool, dry location is excellent for keeping pancake mix fresh. But storing it in the freezer is even better if you only make pancakes a few times a year.
