This five-ingredient chipotle aioli recipe is my secret weapon to jazz up sandwiches, burgers, tacos, and anything that needs a little zing.

I’m all about simple, yet bold flavors, and this aioli rocks my world (and my hamburgers)!

Velvety mayo, spicy chipotle peppers, and zesty lime come together for the most sensational sauce.

What I love most about this recipe is that it’s super easy to whip up, and you can adjust the heat to your liking. 

Whether you’re a fan of a little spice or a fiery kick, this aioli delivers just the right balance of smoky chipotle goodness with a hint of garlic.

Best part? You probably have everything you need in your pantry already, so there’s no reason not to give it a try.

Ingredient Notes

  • Mayonnaise: The creamy base, providing a rich and velvety texture. I always use full-fat mayo for the best results.
  • Fresh Lime Juice: It adds a bright, tangy acidity that makes the condiment pop. If you don't have lime juice on hand, you can sub it out for lemon juice in a pinch.
  • Chipotle Peppers in Adobo Sauce: Delivers a bold, smoky chipotle flavor, infusing the aioli with a deep, robust flavor. My favorite brand is La Costeña because it's not too spicy, and strikes the perfect balance of smoky and tangy.
  • Garlic: This savory aromatic adds depth and complexity to the sauce. I also like to add a dash of onion powder for a mild, savory sweetness that works well with the garlic.
  • Salt: Elevates and harmonizes all the ingredients perfectly.

How to Make Chipotle Aioli

This sauce is so dang delicious and easy, there’s no excuse not to make it.

Just remember: it's best after chilling. So, make it ahead! I keep a batch in the fridge for sandwich emergencies.

1. MIX the mayonnaise, lime juice, chipotle peppers, garlic, and salt in a medium bowl until smooth.

2. TASTE and adjust with more chipotle, or salt if needed.

3. CHILL covered for at least 30 minutes.

4. STIR and use as a dip, spread, or sauce. Enjoy!

Tips For the Best Chipotle Aioli

If you couldn't tell, I’m a little obsessed with this chipotle aioli! 

Perfectly creamy, smoky, and spicy, it’s the ultimate upgrade for tacos, wraps, chicken tenders, and more.

Aside from adding it to everything, I have a few other tips for the perfect sauce:

  • Use room temperature ingredients. This allows for easier mixing and creates a smoother consistency.
  • Full-fat is best. Use full-fat mayonnaise for the best texture and flavor. Light versions can make the mayonnaise aioli too runny.
  • Control the heat. I recommend starting with 2 canned chipotle peppers in adobo and gradually adding more until you reach your ideal spice level. Remember, you can always add more heat, so start slow and work your way up.
  • Rest the garlic. Let the minced garlic sit for 10 minutes before mixing to allow allicin development, which enhances the flavor.
  • Blend for consistency. To achieve an ultra-smooth consistency, I use my immersion blender to make everything perfectly creamy.
  • Try a sweet, smoky twist. Add a little honey or maple syrup to this recipe for a delicious sweet and spicy combo. It also allows you to tame the heat if you were a little heavy-handed with the spices.

What to Serve with Chipotle Aioli

I like to keep this easy chipotle aioli recipe in the fridge whenever I need a good dip or sandwich spread (which is all the time!) Here are some of my favorite things to dip in my all-time favorite dip.

  • French Fries

  • Crab cakes
  • Burgers of pulled pork

  • Drizzled over nachos

How to Store

I love having this sauce on hand! The flavors actually improve after chilling, making it a quick fix to elevate anything and everything.  

To Store: Transfer the chipotle aioli to an airtight container or mason jar and refrigerate for up to 10 days. Give the aioli a quick stir before each use to maintain its consistency.

Note: I don't recommend freezing this dip. It won't thaw well.

This quick and easy chipotle aioli is the perfect condiment to elevate burgers, sandwiches, tacos, roasted veggies, and more!

Ingredients

  • 1 cup mayonnaise

  • 1 tablespoon fresh lime juice

  • 2-4 chipotle peppers in adobo sauce, finely minced

  • 2 cloves garlic, finely minced

  • 1/4 teaspoon salt

Instructions

  • In a medium bowl, stir the mayonnaise, lime juice, 2 minced chipotle peppers, garlic, and salt until smooth and well blended.
  • Alternatively, add the ingredients to a small food processor and pulse until smooth.
  • Taste and adjust with more chipotle or salt as needed.
  • Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Before serving, give the aioli a quick stir and use it as a dip, spread, or sauce for your favorite dishes. Enjoy!
